Description

Delight in these refreshing homemade fruit popsicles, made with natural yogurt or juice and fresh fruit, sweetened with honey and enhanced with hints of vanilla and lemon. Perfect for a healthy, cool treat during warm days or whenever you crave a fruity snack.

Ingredients

Base Ingredients

  • ¾ cup yogurt or juice (6.5 oz)
  • 2 ½ cups fruit

Flavor Enhancers

  • 4-6 Tablespoons honey
  • ¼ teaspoon pure vanilla extract
  • ½ teaspoon lemon juice

Instructions

  1. Prepare Ingredients: Add all ingredients to the container of your Vitamix in the order listed, ensuring a smooth blending process.
  2. Blend Mixture: Blend for 50-70 seconds or until the mixture becomes smooth and uniform in texture, incorporating all flavors perfectly.
  3. Fill Molds: Pour the blended mixture evenly into the six wells of a popsicle mold, ensuring each mold is properly filled.
  4. Secure Molds: Secure the lids and sticks on top of the mold firmly to keep the mixture in place during freezing.
  5. Freeze: Place the molds in the freezer and freeze for at least 8 hours or overnight to allow the popsicles to solidify completely.
  6. Remove Popsicles: When ready, remove the molds from the freezer, run each mold under hot water for about 30 seconds to loosen the popsicles.
  7. Enjoy or Store: Enjoy immediately or place the popsicles on a baking sheet to flash freeze for 30 minutes, then transfer them to an airtight, freezer-friendly container or Ziploc bag for future enjoyment.

Notes

  • Use fresh or frozen fruit as desired; frozen fruit may require slightly longer blending.
  • Adjust the amount of honey based on the sweetness of your fruit and your taste preferences.
  • For vegan options, substitute yogurt with plant-based yogurt and use maple syrup instead of honey.
  • To avoid popsicles sticking, make sure to run molds under warm water briefly before removing.
  • These popsicles are best consumed within a month for optimal flavor and texture.
