Ingredients
Apple Filling
- ¼ cup (2oz/57g) butter
- 4 apples (peeled, cored and diced small)
- ⅔ cup (4oz/115g) brown sugar
- 2 teaspoons cinnamon
- ½ teaspoon salt
- juice of 1 lemon
- 3 teaspoons cornflour
- 1 tablespoon water
Puff Pastry
- 2 x recipe Easy Puff Pastry (or store bought puff pastry)
- Egg wash (1 egg beaten or milk)
- Cinnamon sugar for dusting
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper to prevent sticking and ensure easy cleanup.
- Cook Apple Filling: In a shallow saucepan over medium heat, combine butter, diced apples, brown sugar, cinnamon, salt, and lemon juice. Cook gently until the liquid mostly reduces and the apples soften, creating a rich, aromatic filling.
- Thicken Filling: Mix the cornflour and water in a small bowl to create a slurry. Add this mixture to the apples while stirring continuously. Cook for another 2 minutes to thicken the filling, then remove from heat.
- Cool Filling: Allow the apple filling to cool completely. You can refrigerate the filling for up to 5 days or freeze it for longer storage all while preserving its flavor.
- Roll Puff Pastry: On a floured surface, roll out the puff pastry to approximately ⅛ inch thickness, preparing it for cutting.
- Cut Pastry Rectangles: Cut the rolled pastry into eight rectangles measuring about 4.5 x 6 inches (12 x 15 cm). Place these rectangles on the prepared baking sheets. Remaining pastry can be re-rolled to make more pies.
- Fill Pastry: Place 1-2 heaped teaspoons of the cooled apple filling in the center of each pastry rectangle.
- Seal Pies: Brush the edges of each rectangle with egg wash or milk. Fold the pastry over the filling to create a packet, then press and seal the edges using the tines of a fork.
- Vent and Decorate: Cut three small slits on the top of each pastry to allow steam to escape. Brush the tops with egg wash or milk and sprinkle generously with cinnamon sugar for a crunchy, flavorful crust.
- Bake: Bake in the preheated oven for 25-30 minutes until the pastry is puffed and golden brown. Serve warm, optionally with cream or ice cream. Leftovers can be refrigerated for up to two days and reheated in a 300°F (150°C) oven for 10 minutes to regain crispness.
- Tip: Use a sharp, crisp dessert apple for best flavor. Adjust sugar quantity to your taste preference.
Notes
- Use a firm, tart apple variety like Granny Smith or Honeycrisp for best texture and flavor.
- The apple filling can be refrigerated for up to 5 days or frozen for longer storage.
- Reheat leftover pies in the oven to re-crisp the pastry; avoid the microwave to keep them flaky.
- You can substitute the egg wash with milk for a lighter finish.
- Adjust the amount of cinnamon and sugar in the filling to suit your sweetness preference.
- Ensure slits are made on the pastry top to allow steam to escape during baking, preventing soggy pies.
