Description

A delicious and wholesome fall recipe featuring tender, caramelized honey-glazed acorn squash halves topped with creamy goat cheese and a tangy cranberry drizzle. This dish perfectly balances sweet, savory, and tangy flavors, making it an elegant side or vegetarian main.

Ingredients

For the roasted squash:

  • 2 small acorn squashes (about 1 lb / 450 g each), halved and seeds removed
  • 2 tablespoons (30 ml) olive oil
  • 2 tablespoons (30 ml) honey
  • Salt and freshly ground black pepper, to taste

For the creamy goat cheese and cranberry drizzle:

  • ½ cup (100 g) creamy goat cheese
  • ¼ cup (60 ml) cranberry sauce or compote
  • Fresh thyme or parsley, for garnish

Instructions

  1. Prep: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Glaze: In a small bowl, mix the olive oil and honey until combined. Brush this glaze evenly over the cut sides of the acorn squash halves. Season with salt and freshly ground black pepper to enhance the natural flavors.
  3. Roast: Arrange the squash halves cut-side up on the prepared baking sheet. Roast in the preheated oven for 25 to 30 minutes until the squash is golden brown and caramelized, and tender when pierced with a fork.
  4. Add Goat Cheese: After roasting, allow the squash to cool slightly so the goat cheese doesn’t melt too quickly. Spoon the creamy goat cheese into each squash half, letting it soften into the warm flesh.
  5. Drizzle & Garnish: Drizzle cranberry sauce generously over the goat cheese and garnish with fresh thyme or parsley for a burst of herbaceous aroma and color. Serve warm as a flavorful side dish or vegetarian entree.

Notes

  • Choose small acorn squashes so they roast evenly and fit well on the baking sheet.
  • Use high-quality honey for a richer glaze flavor.
  • You can substitute goat cheese with cream cheese if preferred, but goat cheese adds a nice tang.
  • Cranberry sauce can be homemade or store-bought; if too thick, thin it with a splash of water or orange juice.
  • For a vegan version, substitute honey with maple syrup and goat cheese with a vegan cheese alternative.
  • Leftovers can be refrigerated for up to 3 days and gently reheated in the oven or microwave.
