Description

Delicious honey glazed carrots roasted to perfection with a blend of warm spices and garlic, creating a sweet and savory side dish that is easy to prepare and perfect for any meal.

Ingredients

Carrots

  • 2 pounds carrots, peeled

Glaze

  • ¼ cup honey
  • 3 garlic cloves, minced
  • 2 tablespoons melted butter or ghee
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For Garnish (Optional)

  • Parsley, thyme, or other fresh herbs

Instructions

  1. Prep: Peel and dice the carrots by cutting them on a diagonal into pieces about 1 to 1.5 inches in length. If the carrots are large and thick, slice them in half lengthwise to ensure even cooking.
  2. Preheat Oven: Set your oven to 425°F (220°C) to prepare for roasting the carrots.
  3. Toss Carrots: In a mixing bowl, combine the sliced carrots with honey, minced garlic, melted butter or ghee, olive oil, cinnamon, ground ginger, salt, and black pepper. Toss well to coat each piece evenly with the glaze and spices.
  4. Spread on Sheet Pan: Pour the glazed carrots onto a sheet pan, spreading them out in a single layer to ensure even roasting.
  5. Roast: Place the sheet pan in the preheated oven and roast the carrots for 20 to 25 minutes. Toss them halfway through cooking to promote even caramelization. Optionally, for enhanced caramelization, broil the carrots for an additional 2 to 3 minutes at the end.
  6. Garnish: Remove the carrots from the oven and transfer to a serving dish. Garnish with chopped parsley, thyme, or your choice of fresh herbs.
  7. Serve: Serve immediately as a flavorful and sweet side dish that complements a variety of main courses.

Notes

  • You can substitute melted butter with ghee for a richer flavor or olive oil for a lighter option.
  • Broiling at the end helps achieve a slight caramelized crisp on the edges but is optional.
  • Adjust the amount of honey according to your preferred sweetness level.
  • Fresh herbs such as parsley or thyme add a pop of color and freshness but can be omitted if unavailable.
  • This recipe works well with different varieties of carrots, including traditional orange or rainbow carrots for a colorful presentation.
