Description

A vibrant and refreshing Honey Lime Rainbow Fruit Salad featuring a colorful mix of fresh strawberries, pineapple, blueberries, grapes, kiwis, mandarin oranges, and optional bananas, tossed in a zesty honey-lime dressing. Perfect for a quick, healthy, and naturally sweet snack or side dish.

Ingredients

Fruit

  • 1 lb fresh strawberries, chopped
  • 1 lb fresh pineapple, chopped
  • 12 oz fresh blueberries
  • 12 oz red grapes, sliced into halves
  • 4 kiwis, peeled and chopped
  • 3 mandarin oranges, peeled and segmented
  • 2 bananas, sliced (optional)

Dressing

  • 1/4 cup honey
  • 2 tsp lime zest (zest of 2 medium limes)
  • 1 1/2 Tbsp fresh lime juice

Instructions

  1. Prepare the Fruit: Add all chopped and prepared fruits—strawberries, pineapple, blueberries, grapes, kiwis, mandarin oranges, and optional bananas—into a large mixing bowl.
  2. Mix the Dressing: In a small mixing bowl, whisk together honey, lime zest, and fresh lime juice until fully combined to create a sweet and tangy dressing.
  3. Toss and Serve: Pour the honey-lime dressing over the mixed fruit and gently toss to evenly coat all the fruit pieces. Serve immediately for best freshness and texture.

Notes

  • You can omit bananas if you prefer less sweetness or want the salad to last longer without browning.
  • For added crunch, consider sprinkling chopped nuts such as almonds or walnuts just before serving.
  • To keep the salad fresh longer, store the dressing separately and add just before serving.
  • Use fresh lime juice for the best flavor; bottled lime juice can alter the taste.
  • This salad is best served immediately as the fruit juice and honey mixture can cause some fruits to become mushy over time.
