Description
A step-by-step guide to assembling a beautiful and stable layered cake using baked cake layers and frosting. This recipe details leveling cake layers, stacking them with frosting, applying a crumb coat for crumb containment and stability, and finishing with a smooth or textured decorative frosting layer.
Ingredients
Cake Layers
- Baked cake layers (such as vanilla cake; number depending on 2 or 3 layers)
Frosting
- Approximately 4.5 cups (1080g) frosting for a 2-layer 8- or 9-inch cake
- Approximately 5–6 cups (1200–1440g) frosting for a 3-layer cake
Instructions
- Level the Cake Layers: Ensure your cakes are completely cool before leveling. Use a cake leveler or serrated knife to slice off the domed tops, creating flat layers for stability. Save or utilize the trimmed cake pieces as garnish or treats.
- Stack the Layers: Place the bottom cake layer right side up on a cake turntable or stand. Spread 3/4 to 1 cup (180–240g) of frosting evenly to the edges. Place the second cake layer upside down for a flat base to support the top layer. Add another 3/4 to 1 cup of frosting, then place the top layer right side up or upside down depending on desired cake edge appearance. For two-layer cakes, the top layer can be upside down or right side up.
- Add the Crumb Coat: Apply a thin layer of frosting to the top and sides using about 1 cup (240g) for a 3-layer cake or about 3/4 cup (180g) for a 2-layer cake. Use a bench scraper to smooth the sides. Refrigerate the cake uncovered for 20 minutes to 1 hour to set this crumb coat.
- Finish Decorating the Cake: Once the crumb coat is set, apply a thicker, final layer of frosting using a straight spatula. Smooth the sides with a bench scraper or leave textured, as preferred. Use a piping bag fitted with a Wilton 1M tip to add decorative borders if desired. Refrigerate uncovered for at least 20 minutes before serving to set the frosting. Store or transport using a cake carrier to maintain freshness.
Notes
- Ensure cake layers are completely cool before leveling and stacking to avoid frosting melting.
- Using an offset spatula aids in spreading frosting evenly and smoothly.
- Placing the second layer upside down creates a flatter base for the next layer.
- Crumb coating locks in crumbs and stabilizes the cake for a smooth final finish.
- Refrigerate the cake to help set frosting between steps and before slicing.
- Use a cake turntable for easier frosting application and leveling adjustments.
- Savvy use of cake crumbles can add texture and flavor as garnish or treats.
- A cake lifter and an extra pair of hands help safely transfer the cake when finished decorating.
- A cake carrier helps protect the cake during storage or transport to prevent smearing or damage.
