Ingredients
Quinoa Base
- 1 cup quinoa
Vegetables & Herbs
- 1/2 cup green bell pepper, chopped
- 1/2 cup red bell pepper, chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup fresh basil, finely diced
Protein & Dressing
- 1/2 cup pepperoni slices, quartered
- 1 cup Italian dressing
Instructions
- Cook the quinoa: Rinse 1 cup of quinoa under cold running water and then cook it according to the package instructions, usually by boiling in water for about 15 minutes until fluffy. Once cooked, let the quinoa cool to room temperature.
- Mix the vegetables and pepperoni: In a large bowl, combine the chopped green bell pepper, red bell pepper, finely chopped red onion, quartered cherry tomatoes, quartered pepperoni slices, and finely diced fresh basil. Stir gently to mix evenly.
- Combine with dressing and chill: Pour 1 cup of Italian dressing over the quinoa and vegetable mixture. Toss thoroughly until everything is well coated with the dressing. Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld. Serve chilled for best taste and texture. Enjoy!
Notes
- Quinoa should be rinsed before cooking to remove its natural bitterness.
- For a vegetarian version, omit pepperoni or substitute with plant-based sausage.
- The salad can be made a day ahead and kept chilled; flavors improve after marinating overnight.
- Feel free to add olives or mozzarella for extra Italian flair.
- Use a low-fat or homemade Italian dressing for a healthier option.
