Description
A simple and delicious recipe for juicy pesto pasta that uses a traditional Italian technique of emulsifying pasta cooking water with pesto sauce to create a silky, flavorful coating without excess oil. Perfect for a quick and satisfying main dish with the bright flavors of homemade pesto and freshly grated Parmesan.
Ingredients
Pasta
- 300 - 350 g / 10 - 12 oz pasta of choice (ziti, penne, or spaghetti recommended)
- 2 tsp salt
- 3/4 cup pasta cooking water
Pesto
- 1 quantity homemade pesto (see note 1)
For Serving
- Parmesan cheese, freshly grated
Instructions
- Boil the Water: Bring a large pot of water to a rolling boil, adding 2 teaspoons of salt to season the water thoroughly.
- Cook the Pasta: Add the pasta to the boiling water and cook according to the time recommended on the package until al dente.
- Reserve Pasta Water: Just before draining the pasta, scoop out 1 cup of the hot pasta cooking water and set it aside.
- Drain the Pasta: Drain the pasta in a colander and let it sit for a minute to remove excess water but remain hot.
- Combine Pasta and Pesto: Transfer the drained pasta to a large bowl (avoid using the hot pot). Add the homemade pesto along with 1/4 cup of the reserved pasta water. Toss gently to coat the pasta evenly with the pesto sauce.
- Adjust Sauce Consistency: If the pasta looks dry or sticky, add more of the reserved pasta water a little at a time, tossing until the sauce turns silky and clings perfectly to each strand or piece of pasta.
- Season to Taste: Taste the pesto pasta and add more salt and freshly ground black pepper if desired for balanced flavor.
- Serve: Serve immediately, garnished with freshly grated Parmesan cheese for an added savory finish.
Notes
- Note 1: Use homemade pesto for the best flavor, but store-bought pesto can be used as a substitute.
- Note 2: Pasta shapes like ziti, penne, or spaghetti work best for this recipe, but feel free to use your favorite.
- The key secret to juicy pesto pasta is using the starchy pasta cooking water to emulsify the pesto sauce, creating a silky, luscious coating without excess oil.
- Serve this pesto pasta fresh for the best texture and flavor; it is not ideal for reheating as the sauce can separate.
