Ingredients
Brownie Base
- 1 recipe ultimate keto brownies (omit the chocolate chips)
Topping
- 1/3 cup whipping cream
- 2 large egg yolks
- 1/4 cup Swerve Granular
- 1/4 cup allulose (or more Swerve Granular)
- 3 tbsp salted butter (cut into 3 pieces)
- 1/2 tsp vanilla extract
- 1/2 cup unsweetened shredded coconut
- 1/2 cup chopped pecans (lightly toasted)
Chocolate Drizzle
- 1 ounce sugar-free dark chocolate (melted)
- 1 tsp coconut oil
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350ºF (175ºC). Grease a 9x9 inch metal baking pan thoroughly to prevent sticking.
- Make Brownie Base: Prepare the ultimate keto brownie batter according to its recipe, but omit the chocolate chips. Spread the batter evenly into the prepared pan. Bake for about 15 minutes, until the edges are set but the center is still slightly wet, ensuring a fudgy texture.
- Cool Brownies: Remove the brownies from the oven and allow them to cool completely in the pan. This step is important for the topping to set properly later.
- Cook Topping Mixture: In a medium saucepan over medium-low heat, combine the whipping cream, egg yolks, Swerve Granular, allulose, and salted butter. Cook while stirring continuously for 5 to 10 minutes until the mixture thickens to a custard-like consistency.
- Add Flavor and Texture: Remove the saucepan from heat and stir in the vanilla extract, shredded coconut, and toasted pecans. Mix until everything is well combined.
- Apply Topping: Spread the coconut-pecan topping evenly over the cooled brownie base.
- Melt Chocolate Drizzle: Place sugar-free dark chocolate and coconut oil in a heatproof bowl set over a pan of barely simmering water (double boiler). Stir until melted and smooth.
- Drizzle Chocolate: Drizzle the melted chocolate evenly over the topping layer on the brownies.
- Chill to Set: Place the brownies in the refrigerator for at least 30 minutes to allow the topping and drizzle to set firmly before cutting into bars.
Notes
- Ensure the brownies have completely cooled before adding the topping to prevent it from melting.
- Lightly toast the pecans in a dry skillet over medium heat for a few minutes until fragrant to enhance their flavor.
- Use sugar-free or keto-approved sweeteners like Swerve and allulose to keep the recipe keto-friendly.
- For a dairy-free version, substitute whipping cream and butter with coconut cream and coconut oil, respectively, but note this may alter texture.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
