Description
Key Lime Eclair Cake is a no-bake, layered dessert featuring creamy, tangy key lime filling sandwiched between crispy graham crackers and topped with smooth vanilla frosting. It captures the refreshing taste of traditional key lime pie but is much easier to make, perfect for quick summer treats or gatherings.
Ingredients
Filling
- 8 oz cream cheese, softened
- 14 oz can sweetened condensed milk
- 1 pound bag of key limes, juiced (about 3/4 cup)
- 8 oz whipped topping (Cool Whip, thawed)
Layers and Topping
- 4 sleeves graham crackers
- 16 oz canned vanilla frosting
Instructions
- Prepare the filling: In a large mixing bowl, use a hand mixer to whip the softened cream cheese until creamy and smooth.
- Add sweetened condensed milk: Gradually add the can of sweetened condensed milk to the whipped cream cheese and mix until fully combined, creating a rich and smooth base.
- Add key lime juice: Slowly pour in the fresh key lime juice and continue mixing gently until the mixture is well incorporated, lending the classic tart lime flavor.
- Fold in whipped topping: Carefully fold in the thawed whipped topping to lighten the mixture, maintaining its fluffy texture.
- Layer graham crackers: In a 9x13 inch pan, arrange a single layer of graham crackers evenly to form the base of the cake.
- Add filling layers: Spread one-third of the key lime filling over the graham crackers. Repeat this layering process two more times, creating three layers of the creamy filling separated by graham crackers.
- Top with graham crackers: Place a final layer of graham crackers on top to complete the layering.
- Prepare frosting: Remove the foil completely from the canned vanilla frosting. Heat the frosting in the microwave for 30 seconds until pourable.
- Frost the cake: Pour the warmed frosting evenly over the top layer of graham crackers. Use a spatula to spread the frosting smoothly, covering the entire surface.
- Chill: Cover the pan with plastic wrap and refrigerate the cake for at least 4 hours or overnight to allow the layers to set and flavors to meld.
- Serve: Once chilled, slice and serve immediately for a refreshing and creamy dessert experience.
Notes
- Ensure the cream cheese is fully softened to avoid lumps in the filling.
- Fresh key lime juice is preferred for the authentic tart flavor, but bottled lime juice can be substituted if necessary.
- Allow the cake to chill overnight for the best texture and flavor absorption.
- Use full-fat cream cheese and whipped topping for optimal creaminess.
- If frosting is too thick to pour after microwaving, heat in additional 10-second bursts.
