Description

This smooth and tangy Lemon Buttercream Frosting is a perfect blend of creamy butter and fresh lemon zest and juice, ideal for topping cakes, cupcakes, or cookies with a bright citrus flavor and velvety texture.

Ingredients

Buttercream Base

  • 1 cup (16 Tbsp; 226g) unsalted butter, softened to room temperature
  • 4 and 1/2 cups (540g) confectioners’ sugar
  • 2 and 1/2 Tablespoons fresh lemon juice
  • 2 Tablespoons heavy cream
  • 2 teaspoons lemon zest
  • pinch salt, to taste

Instructions

  1. Beat the Butter: Using a handheld or stand mixer with a paddle or whisk attachment, beat the softened butter on medium speed until creamy, which should take about 2 minutes.
  2. Add Ingredients Gradually: With the mixer running on low speed, add the confectioners’ sugar, fresh lemon juice, heavy cream, and lemon zest slowly to combine all ingredients smoothly.
  3. Whip Until Fluffy: Increase the mixer speed to high and beat the frosting mixture for a full 3 minutes until it becomes light and airy.
  4. Adjust Consistency and Season: Taste the frosting and add a pinch of salt if needed. If the frosting is too thin, add up to 1/2 cup more confectioners’ sugar; if it is too thick, add an additional tablespoon of heavy cream to reach desired texture.
  5. Store Properly: Cover the frosting tightly and store it in the refrigerator for up to 1 week or freeze for up to 3 months. When ready to use after chilling, thaw in the refrigerator, bring to room temperature, then rebeat for a few seconds to restore the creamy texture. You may add a bit of milk or heavy cream if it remains too stiff.

Notes

  • For best results, ensure the butter is at room temperature before starting.
  • Freshly squeezed lemon juice and zest are essential for vibrant lemon flavor.
  • Adjust the thickness of the frosting by modifying the amount of confectioners’ sugar or heavy cream.
  • Properly stored, the frosting can be prepared in advance and kept refrigerated or frozen.
  • If frosting becomes too stiff after refrigeration or freezing, gentle reheating and re-whipping will restore its spreadable consistency.
