Description

Loco Moco is a classic Hawaiian comfort dish featuring juicy hamburger patties served over flavorful basmati rice, all smothered in a rich mushroom gravy and topped with a perfectly fried egg. This hearty meal combines savory elements with umami-packed mushrooms, making it a satisfying and delicious dish perfect for any time of day.

Ingredients

Mushroom Gravy

  • 2 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 4 ounces shiitake mushrooms, stems removed and thinly sliced
  • 1 2/3 cups chicken stock
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste

Hamburger Patties

  • 8 ounces lean ground beef
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/4 teaspoon ground white pepper (optional)
  • 2 tablespoons neutral oil

Fried Eggs and Assembly

  • 2 tablespoons neutral oil
  • 2 large eggs
  • 1 1/2 cups cooked basmati rice
  • 1 tablespoon furikake seasoning
  • 1 tablespoon sliced chives
  • 2 tablespoons unsalted butter (remaining from total 4 tablespoons)

Instructions

  1. Make the mushroom gravy: Add 2 tablespoons butter to a saucepan and place over medium-high heat. Add minced garlic and sliced shiitake mushrooms and sauté for about 3 minutes until the mushrooms are lightly caramelized. Season with salt and pepper. Melt the remaining butter into the mixture, then sprinkle the flour over and whisk together to form a roux.
  2. Simmer the gravy: Lower the heat to medium and gradually stir in the chicken stock, whisking continuously to avoid lumps. Continue to stir until the gravy thickens enough to coat the back of a wooden spoon, about 5 minutes. Season again with salt and pepper to taste. Cover and set aside to keep warm.
  3. Prepare hamburger patties: In a mixing bowl, combine the ground beef with salt, garlic powder, and ground white pepper (if using). Mix gently until incorporated, then form into two even patties, about 4 ounces each.
  4. Cook patties: Heat 2 tablespoons of neutral oil in a large skillet over medium-high heat. Once hot, add the burger patties and sear for 3 to 4 minutes per side. Lower the heat to medium and continue cooking the patties to medium doneness, about 3 to 4 more minutes.
  5. Fry the eggs: In a separate skillet, heat 2 tablespoons of neutral oil over medium-high heat. When hot, add the eggs and fry for 3 to 4 minutes or until the whites are fully set and edges crisped. Remove from heat once done.
  6. Assemble the Loco Moco: Divide the cooked basmati rice between two plates. Place one burger patty on top of the rice on each plate. Ladle a generous amount of mushroom gravy over each patty, then top with a fried egg. Add another ladle of gravy over the eggs. Finish by sprinkling furikake seasoning and sliced chives on top. Serve immediately.

Notes

  • Use lean ground beef for juicier, healthier patties.
  • Furikake seasoning adds a unique umami flavor but can be omitted if unavailable.
  • You can substitute shiitake mushrooms with cremini or button mushrooms.
  • Adjust gravy thickness by adding more chicken stock or flour as needed.
  • Cook eggs to your preferred doneness; traditionally, the yolk is runny.
