Ingredients
For the Kulfi Base
- 2 ripe mangoes
- 2.5 cups milk
- ¼ cup sugar
- 2 tablespoons condensed milk (optional)
Instructions
- Boil the milk: Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat.
- Add sugar and reduce milk: Stir in the sugar, mix well, and then reduce the heat to low or medium. Let the milk simmer until it reduces to about half its original volume.
- Add condensed milk: Stir in the condensed milk and bring the mixture to a gentle boil again. Then switch off the flame and allow the milk to cool completely.
- Prepare mango pulp: While the milk cools, peel and chop the ripe mangoes. Transfer the mango pieces to a mixer and blend until smooth to make the mango pulp.
- Combine mango pulp and milk: Once the milk is completely cooled, add the mango pulp to it and mix thoroughly using a whisk to get a smooth, consistent mixture.
- Pour into molds: Pour the kulfi mixture into popsicle or kulfi molds. Cover them with cling wrap and insert popsicle sticks or wooden skewers as handles.
- Freeze: Place the molds in the freezer and freeze overnight or for a minimum of 6 hours until they are completely set.
- Serve: To remove the kulfi from molds, run the outside of the mold under warm running water for about a minute and gently pull the kulfi out. Serve chilled and enjoy!
Notes
- Use ripe, sweet mangoes like Alphonso or Ataulfo for best flavor.
- Reducing the milk concentrates its richness and sweetness, enhancing the kulfi’s creamy texture.
- Condensed milk is optional but adds extra creaminess and sweetness.
- Ensure the milk is completely cool before mixing with the mango pulp to avoid separation.
- Freezing times can vary depending on freezer settings; allow at least 6 hours for best results.
- You can garnish frozen kulfi with chopped nuts like pistachios or almonds if desired.
