Description
Deliciously crispy Mashed Potato Cakes that are easy to make and perfect as a snack, side dish, or appetizer. Combining creamy mashed potatoes with cheese, panko breadcrumbs, and optional fresh herbs or spices, these cakes are pan-seared to golden perfection or can be baked or air-fried for a healthier option.
Ingredients
Mashed Potato Cake Mixture
- 2 cups cold mashed potatoes
- 1 extra large egg
- ½ cup - 1 cup panko breadcrumbs (plus ½ cup for dredging)
- ½ cup grated cheese (parmesan, shredded cheddar, gruyere, Mexican cheese blend, etc.)
- Optional additions: jalapeno, fresh herbs (dill, chives, cilantro, basil, parsley), green onions, bacon bits, onion, garlic, black pepper
For Cooking
- Olive oil or avocado oil for searing
Instructions
- Combine Ingredients: In a large mixing bowl, place the cold mashed potatoes, egg, panko breadcrumbs (start with ½ cup, add more if needed), and grated cheese. Using a fork, break up the potatoes and stir the mixture until well combined, incorporating any optional ingredients like herbs or spices at this point.
- Form Potato Cakes: With wet hands to prevent sticking, shape the potato mixture into eight golf-ball-sized balls. This helps keep the mixture from sticking and ensures even sizing.
- Dredge with Panko: On a plate, spread ½ cup of panko breadcrumbs. Flatten each potato ball into a patty about ¾ to 1 inch thick, then coat both sides thoroughly in the panko breadcrumbs for a crispy crust.
- Sear the Cakes: Heat a generous amount of olive or avocado oil in a skillet over medium-low heat. Once hot, carefully place the potato cakes into the pan and cook each side until golden brown and crispy, approximately 3-4 minutes per side. Once cooked, keep the cakes warm in a low oven or toaster oven.
- Alternative Cooking Method: For a lighter version, spray each side of the potato cakes with olive oil spray and cook them in a convection oven, toaster oven, or air fryer until they are crisp and golden, usually about 10-15 minutes at 375°F (190°C), flipping halfway through.
Notes
- Panko breadcrumbs are preferred for a crispier texture, but regular breadcrumbs can be used.
- Adjust the amount of panko in the mixture depending on the moisture level of your mashed potatoes.
- Using cold mashed potatoes helps to hold the cakes together better.
- Customize your cakes by adding your favorite herbs, spices, or finely chopped vegetables for extra flavor.
- To keep cakes warm without drying out, place them on a wire rack in a warm oven rather than stacking.
