This Melt-In-Your-Mouth Creamy Braised Leeks recipe delivers tender, flavorful leeks simmered in a luscious cream sauce enriched with white wine, Dijon mustard, and fresh thyme. Finished optionally with a golden parmesan crust, this dish is an elegant side perfect for comforting meals, highlighting the delicate sweetness and earthiness of leeks.
Ingredients
Leeks
- 2 large leeks (about 3 pounds total before trimming)
For Searing and Braising
- 1-2 tablespoons very soft unsalted butter
- 1-2 tablespoons neutral oil of choice (e.g., vegetable or canola oil)
- Kosher salt, to season
- Ground black pepper, to season
Braising Cream Sauce
- ½ cup dry, unoaked white wine (such as Pinot Grigio)
- ¾ cup heavy cream
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh thyme leaves
Optional Topping
- ¼ cup finely grated parmesan cheese
Instructions
- Clean the leeks: Trim the dark green tops and root ends from the leeks. Slice them crosswise into 1-inch pieces. Check the cut sides; if the outer ring appears tough or dirt is trapped, trim and discard that section. Place the sliced leeks in a bowl of cold water for several minutes to remove any grit, then lift out and pat dry thoroughly.
- Prep the oven and baking dish: Preheat the oven to 325°F and position a rack in the upper third. Butter a small 1-1½ quart baking dish (around 9-inch oval or 6×8-inch rectangular). Lightly season with kosher salt and black pepper. Place the baking dish on a baking sheet to catch any drips and set aside.
- Sear the leeks: Heat just enough neutral oil to coat the bottom of a small skillet over medium heat. Arrange the leeks cut side down in a single layer and cook 4-5 minutes until golden. Flip and cook the second cut side for another 4-5 minutes until golden. Transfer the seared leeks to the prepared baking dish, arranging them so the seared cut sides face up and down, not on their rounded sides, leaving space for the cream sauce. This intensifies flavor and softens the tougher outer layers.
- Build the braising cream sauce: Deglaze the skillet with white wine, scraping browned bits from the pan bottom. Simmer until the wine is reduced by half. Reduce heat to medium-low and stir in heavy cream, Dijon mustard, and fresh thyme. Season with about ½ teaspoon kosher salt and a few twists of black pepper. Gently simmer for 2-3 minutes until the sauce slightly thickens and coats the spoon, avoiding boiling to prevent cream separation.
- Assemble and braise: Pour the cream sauce over the leeks so the liquid nearly reaches their tops without fully submerging them. Cover the baking dish tightly with foil and bake for 35-40 minutes, until the leeks are very tender and easily pierced with a fork.
- Optional parmesan finish: Remove the foil and sprinkle parmesan evenly over the leeks. Set the oven to broil on high and return the dish to the oven for 3-5 minutes, until the cheese is bubbly and golden browned on top.
- Serve: Let cool slightly, then garnish with finely chopped fresh chives if desired. Serve warm and enjoy this creamy, melt-in-your-mouth delicacy.
Notes
- Choose large leeks for better texture and yield; smaller leeks may cook faster but offer less volume.
- Ensure thorough cleaning of leeks to remove grit trapped between layers.
- Use an unoaked white wine like Pinot Grigio for a clean, bright flavor without overpowering oak notes.
- Do not boil the cream sauce to prevent it from breaking or separating.
- The optional parmesan topping adds a delightful crispy, savory layer but can be omitted for a dairy-rich yet simpler dish.
- Serve as an elegant side to roast meats, fish, or a vegetarian main course.
