Delight in these charming Mini Bundt Cakes, perfectly moist and buttery with a light vanilla glaze. Ideal for a sweet treat or party dessert, these bite-sized cakes bake quickly and decorate beautifully with a smooth, sweet glaze.

Ingredients

Cake Ingredients

  • 1 1/4 sticks Unsalted Butter (140g, room temperature)
  • 1 1/4 cups Granulated Sugar (250g)
  • 3 Large Eggs (room temperature)
  • 2 cups All-purpose Flour (240g)
  • 2/3 cup Whole Milk (150ml, room temperature)
  • 1 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Vanilla Extract

Glaze Ingredients

  • 2 cups Powdered Sugar (240g)
  • 3/4 stick Unsalted Butter (84g)
  • 2 tbsp Whole Milk
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat Oven: Set your oven to 350°F (180°C) to get it ready for baking the mini bundt cakes.
  2. Cream Butter and Sugar: In a mixing bowl, beat together the room temperature butter and granulated sugar until the mixture is light and fluffy, creating a smooth base for the cakes.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time along with the vanilla extract until fully combined, ensuring the batter is smooth.
  4. Incorporate Dry Ingredients Partially: Mix in half of the all-purpose flour along with baking powder, baking soda, and salt, blending gently to avoid overmixing.
  5. Mix in Milk: Add the whole milk and mix until the batter is completely incorporated and smooth.
  6. Add Remaining Flour: Stir in the rest of the flour carefully until the batter is lump-free and evenly combined.
  7. Prepare Pan: Grease your mini bundt pan thoroughly, then fill each cavity about two-thirds full with batter. Using a piping bag can help distribute the batter neatly, especially if your pan has limited cavities.
  8. Bake the Cakes: Place the pan in the preheated oven and bake for 12 minutes or until golden brown. Use a toothpick test to check doneness—insert it in a cake and it should come out clean.
  9. Cool the Cakes: Remove the cakes from the oven and allow them to cool in the pan for exactly 10 minutes. Afterward, invert the pan onto a wire rack to release the cakes gently.
  10. Make the Glaze: Sift powdered sugar into a bowl, melt butter in the microwave and add it along with milk and vanilla extract to the sugar. Stir until smooth.
  11. Adjust Glaze Consistency: If you prefer a thinner glaze, add extra milk a little at a time until the desired consistency is reached.
  12. Optional Flavors: You can keep a simple vanilla glaze or customize your glaze by adding flavors such as lemon, maple pecan, chocolate, coffee, or strawberry as per your preference.

Notes

  • Make sure all ingredients, especially eggs, butter, and milk, are at room temperature for the best texture.
  • Filling the mini bundt pan cavities about two-thirds full prevents overflow during baking.
  • The toothpick test is crucial to avoid under or overbaking the mini cakes.
  • Use a piping bag for neater and easier batter transfer into the pan cavities.
  • Letting the cakes cool in the pan prevents them from breaking when removing.
  • The glaze can be customized with different flavor extracts or ingredients for variety.
