Description

Tender and flavorful Mississippi Chicken made easy in the slow cooker with a tangy blend of pepperoncini peppers, ranch seasoning, au jus gravy mix, and butter. Perfect for a hearty meal, this recipe yields juicy shredded chicken that’s delicious on its own or served over rice, mashed potatoes, or in sandwiches.

Ingredients

Chicken

  • 4 large boneless skinless chicken breasts

Seasonings & Sauce

  • 12 pepperoncini peppers plus 1/4 cup juice from the jar
  • 1 (1 ounce) packet ranch seasoning mix (e.g., Hidden Valley)
  • 1 (1 ounce) packet au jus gravy mix
  • 1/2 cup unsalted butter (1 stick), cut into pieces

Instructions

  1. Prepare the slow cooker: Place the 4 large boneless skinless chicken breasts at the bottom of the slow cooker, spreading them out evenly.
  2. Add pepperoncini peppers and juice: Pour in 1/4 cup of pepperoncini juice over the chicken, then arrange the 12 whole pepperoncini peppers on and around the chicken breasts to infuse flavor and mild heat.
  3. Season the chicken: Sprinkle the packet of ranch seasoning mix and the packet of au jus gravy mix evenly over the chicken breasts for a rich and savory taste.
  4. Add butter: Distribute the 1/2 cup of unsalted butter pieces on top of the seasoned chicken to melt and enrich the sauce as it cooks.
  5. Cook low and slow: Cover the slow cooker with the lid and cook for 3 to 4 hours on the high setting, or alternatively, cook for 6 to 8 hours on low until the chicken is tender and easily shreddable.
  6. Shred the chicken: Once cooked, remove the chicken breasts and shred them thoroughly using two forks, mixing them well with the flavorful cooking juices and peppers left in the slow cooker.
  7. Serve and enjoy: Serve the shredded Mississippi Chicken hot as a main dish, paired with your favorite sides, or use it in sandwiches, tacos, or salads.

Notes

  • For spicier chicken, add some of the pepperoncini seeds or extra peppers.

  • Can freeze cooked shredded chicken for up to 3 months.
  • Adjust cooking times based on your slow cooker model to avoid overcooking.
