Description

Muhammara is a flavorful Middle Eastern dip made from roasted red peppers and walnuts, combined with spices and pomegranate molasses for a perfect balance of smoky, nutty, and tangy flavors. This vibrant dip is perfect as an appetizer or snack served with toasted pita bread or fresh vegetables.

Ingredients

Main Ingredients

  • 2-3 large red bell peppers (about 1.5 pounds, or 2 cups roasted red bell peppers)
  • 1/2 cup walnuts (use 1 cup for nuttier flavor)
  • ¼ cup breadcrumbs
  • 2 cloves garlic (chopped)
  • 1 tablespoon lemon juice
  • 3 teaspoons pomegranate molasses
  • 1 tablespoon cayenne pepper
  • 1 tablespoon crushed Aleppo pepper (use paprika as a substitute)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup olive oil (or more as needed, up to 1/2 cup)

For Serving

  • Extra chopped walnuts
  • Fresh chopped parsley (optional)
  • Spicy chili flakes (optional)
  • Toasted pita bread

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the red bell peppers.
  2. Prepare Peppers: Slice the red bell peppers in half lengthwise and remove the stems and seeds. Place them cut side down on a lightly oiled baking sheet.
  3. Roast Peppers: Bake the peppers in the center of the oven for 20 to 30 minutes, until the skins are charred and bubbling.
  4. Steam and Peel Skins: Remove the roasted peppers from the oven and cover them with paper towels to steam, which helps loosen the skins. Once cooled, peel off and discard the skins.
  5. Chop Roasted Peppers: Roughly chop the peeled roasted peppers and transfer them to a food processor.
  6. Toast Walnuts: While the peppers roast, toast the walnuts in a dry pan over medium heat for 1-2 minutes, tossing frequently to prevent burning. Add toasted walnuts to the food processor.
  7. Add Remaining Ingredients: Add breadcrumbs, chopped garlic, lemon juice, pomegranate molasses, cayenne, Aleppo pepper, cumin, salt, and pepper to the food processor with the peppers and walnuts.
  8. Process Dip: Blend all ingredients until smooth, adding olive oil gradually to achieve desired consistency. Adjust seasoning with additional salt, lemon juice, or oil as needed.
  9. Serve: Transfer the Muhammara dip to a serving bowl, garnish with extra chopped walnuts, parsley, and chili flakes if desired, and serve with toasted pita bread.

Notes

  • Pomegranate molasses adds a distinct tangy sweetness; if unavailable, substitute with a mix of lemon juice and a touch of honey or molasses.
  • Adjust the amount of cayenne and Aleppo pepper to control the spiciness according to your preference.
  • Using more walnuts will give a nuttier, richer flavor.
  • To make this recipe gluten-free, substitute the breadcrumbs with gluten-free alternatives or omit them.
  • Toasting the walnuts enhances their flavor but be careful not to burn them, as that can lead to bitterness.
