Ingredients
Noodles
- 6 ounces wide udon noodles
Vegetables & Aromatics
- 1 tablespoon vegetable oil
- 8 ounces cremini mushrooms, sliced
- 1/2 pound asparagus, trimmed and cut into 1-1/2 inch pieces
- 1 cup peas, fresh or frozen
- 1 garlic clove, minced
- 1 tablespoon minced fresh ginger
- 4 scallions, thinly sliced, white and green parts separated
Seasonings
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 3 tablespoons low sodium soy sauce
- 1 tablespoon sesame seeds
Instructions
- Cook noodles: Cook the udon noodles according to the package instructions. Once cooked, transfer them to a colander and rinse with cold water to stop the cooking process and prevent sticking.
- Sauté mushrooms: Heat the vegetable oil in a wok or large skillet over high heat until shimmering. Add the sliced mushrooms and sauté for 3 minutes until they start to soften and develop a nice brown color.
- Add asparagus: Add the trimmed and cut asparagus pieces to the pan and continue sautéing for another 3 minutes until the asparagus brightens and becomes tender-crisp.
- Cook peas: Stir in the peas and cook for 2 to 3 more minutes until the peas are heated through, mushrooms are well browned, and asparagus is crisp-tender.
- Add aromatics and seasoning: Mix in the minced garlic, fresh ginger, white parts of the scallions, red pepper flakes, kosher salt, and black pepper. Cook for about 30 seconds until fragrant, carefully stirring to avoid burning the garlic.
- Combine noodles and sauce: Add the cooked udon noodles and pour in the low sodium soy sauce. Stir well to combine and allow the noodles to warm through for a couple of minutes.
- Finish with scallions and sesame seeds: Fold in the green parts of the scallions and sprinkle with sesame seeds just before serving. Toss lightly to distribute evenly.
Notes
- Use fresh or frozen peas, but if using frozen, thaw beforehand for best texture.
- Adjust red pepper flakes according to your preferred spice level.
- Low sodium soy sauce helps control saltiness, but regular soy sauce can be used if preferred.
- For a nuttier flavor, toast the sesame seeds lightly before adding.
- To keep noodles from sticking, rinse with cold water immediately after cooking.
