Description

Classic old-fashioned pancakes made from scratch with simple ingredients. These fluffy, golden pancakes are perfect for a comforting breakfast or brunch, served hot with butter and maple syrup.

Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter (plus more for cooking)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. Combine Wet Ingredients: In another bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using) until the mixture is smooth.
  3. Make the Batter: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps in the batter are normal.
  4. Cook Pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter. Pour about 1/4 cup of batter onto the skillet for each pancake.
  5. Flip & Finish: Cook until bubbles form on the surface of the pancake and the edges look set, about 2 minutes. Then flip and cook for another 1 to 2 minutes until the pancakes are golden brown and cooked through.
  6. Serve Warm: Stack the pancakes and serve immediately with butter, maple syrup, or your favorite toppings.

Notes

  • Do not overmix the batter to keep pancakes fluffy and tender.
  • Adjust the heat as needed to avoid burning or undercooking the pancakes.
  • Use fresh baking powder for the best rise.
  • Adding vanilla extract is optional but enhances flavor.
  • For thinner pancakes, add a little more milk; for thicker pancakes, reduce the milk slightly.
