Ingredients
Chicken and Marinade
- 2 1/2 lbs boneless skinless chicken thighs
- 8 cloves garlic, minced
- 2 canned chipotle chiles, minced
- 2 tbsp adobo sauce
- 5 tbsp tomato paste
- 2 tbsp apple cider vinegar
- 2 tbsp smoked paprika
- 2 tbsp brown sugar
- 2 tbsp olive oil
- 1 tsp kosher salt
- Zest and juice of 1 large orange
Additional Ingredients
- 1 large orange, sliced into 1/2-inch half-moon slices
- 4 red onions, sliced
- 16 warm tortillas
- 1 cup cilantro, chopped
- 2 limes, quartered
Instructions
- Preheat the oven: Set your oven to 400°F (204°C) to prepare for baking the chicken and vegetables.
- Prepare the marinade: In a large bowl, combine minced garlic, chopped chipotle chiles, adobo sauce, tomato paste, apple cider vinegar, smoked paprika, brown sugar, olive oil, kosher salt, and the zest plus juice of one orange. Mix thoroughly to create a rich, spicy marinade.
- Marinate the chicken and prepare the baking dish: Toss the chicken thighs in the marinade until fully coated. Arrange sliced red onions and orange half-moon slices evenly in the bottom of a 9x13-inch baking dish, then lay the marinated chicken on top. Spoon any leftover sauce over the chicken for extra flavor.
- Bake the chicken: Place the baking dish uncovered in the oven and bake for 25 to 30 minutes until the chicken is cooked through. For enhanced caramelization, broil the chicken for an additional 2 to 3 minutes at the end of baking.
- Caramelize the onions: Remove the chicken from the oven and set it aside on a plate. Put the baking dish with the onions back under the broiler for 3 to 5 minutes to develop a caramelized, brown finish, or serve the onions as they are alongside the chicken if preferred.
- Shred or slice the chicken: Allow the chicken to cool slightly until it’s safe to handle, then either slice or shred into bite-sized pieces, depending on your preference.
- Serve: Warm the tortillas and serve the chicken with the caramelized onions, chopped cilantro, and lime wedges. Squeeze lime juice over the top for a fresh, zesty finish that complements the smoky chipotle flavors.
Notes
- For extra smoky heat, add more chipotle chiles or adobo sauce to the marinade.
- Use boneless skinless chicken thighs for juicy, tender meat; breasts can be substituted but may be less moist.
- Caramelizing the onions separately enhances their sweetness and adds depth to the dish.
- Tortillas can be warmed on a skillet or wrapped in foil and heated in the oven for convenience.
- This dish pairs well with a side of black beans or Mexican rice for a complete meal.
