Description

Oven-Roasted Shrimp Scampi is a flavorful and easy-to-make seafood pasta dish featuring succulent shrimp baked with garlic, shallots, and a hint of crushed red pepper, tossed with gluten-free linguine, fresh parsley, lemon zest, and optional Parmesan cheese. Perfect for a quick and elegant weeknight dinner.

Ingredients

Shrimp and Sauce

  • 6 garlic cloves, minced
  • 1 large shallot, halved and thinly sliced
  • 1 teaspoon crushed red pepper flakes
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly chopped parsley leaves
  • Zest of 1/2 lemon
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 pound large shrimp, peeled, deveined, and tails removed

Pasta and Garnish

  • 8 ounces gluten-free linguine
  • 1/3 cup grated Parmesan cheese (optional)
  • 1 lemon, cut into wedges
  • Chopped fresh parsley leaves for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F to prepare for roasting the shrimp and aromatics.
  2. Boil Water for Pasta: Bring a large pot of water to a rolling boil to cook the linguine later.
  3. Prepare Shrimp Mixture: In a 9x13-inch baking dish, combine minced garlic, sliced shallots, crushed red pepper flakes, olive oil, chopped parsley, lemon zest, kosher salt, black pepper, and shrimp. Toss everything together to coat the shrimp evenly in the flavorful mixture.
  4. Bake Shrimp: Place the baking dish in the preheated oven and roast until the shrimp is fully cooked and opaque, about 13 minutes.
  5. Cook Pasta: While the shrimp is baking, add plenty of salt (about 1 tablespoon) to the boiling water and cook the gluten-free linguine according to the package instructions until al dente. Drain the pasta once done.
  6. Combine Pasta and Shrimp: Remove the shrimp from the oven and add the drained pasta directly to the baking dish. Gently toss the pasta with the shrimp and sauce until everything is well coated.
  7. Add Cheese and Seasoning: If using Parmesan cheese, sprinkle it over the pasta and toss again. Taste and adjust seasoning with additional salt if needed.
  8. Serve: Divide the pasta and shrimp among four bowls, garnish with extra chopped parsley, and serve with lemon wedges on the side for squeezing over the dish.

Notes

  • Use gluten-free linguine to keep the dish gluten-free.
  • Parmesan cheese is optional and can be omitted to make the dish dairy-free.
  • Adjust crushed red pepper flakes to control heat level.
  • Peeling and deveining shrimp beforehand ensures easier eating and better presentation.
  • For extra lemon flavor, squeeze fresh lemon juice over the dish just before serving.
