Description

A flavorful and easy Parmesan Crusted Steak and Potato Sheet Pan Dinner that combines tender flank steak, crispy roasted red potatoes, and fresh asparagus, all broiled to perfection with garlic, Parmesan, and herbs. This 30-minute meal is perfect for a quick, delicious, and satisfying dinner for four.

Ingredients

Steak and Vegetables

  • 1 1/2 lb flank steak
  • 2 lb red potatoes
  • 1 lb asparagus
  • 3-4 garlic cloves

Seasonings and Toppings

  • 1 tsp dried parsley
  • 4-5 tbsp grated Parmesan cheese
  • 3 1/2 tbsp olive oil
  • 1 tsp cracked black pepper
  • 1/2 tsp sea salt (or to taste)

Instructions

  1. Preheat Oven: Preheat your oven to the Broil setting on High to prepare for cooking the ingredients quickly with direct heat.
  2. Prepare Vegetables: Trim the ends off the asparagus, rinse and pat them dry. Cut the red potatoes into quarters, or eighths if they are large, ensuring even cooking.
  3. Toss Potatoes: In a medium bowl or on an oiled sheet pan, combine the potatoes with 2 tablespoons olive oil, 2 tablespoons grated Parmesan, 1 minced garlic clove, 1/2 teaspoon cracked black pepper, sea salt to taste, and dried parsley. Toss thoroughly to coat the potatoes evenly with seasoning and cheese.
  4. Broil Potatoes: Spread the seasoned potatoes evenly on the sheet pan and place under the broiler for 6-8 minutes until they start to develop a light golden-brown color, indicating the beginning of crisping.
  5. Prepare Steak: While the potatoes are broiling, coat both sides of the flank steak with 1 tablespoon olive oil and season with sea salt. Add two smashed garlic cloves and the remaining cracked pepper. Sprinkle 2 tablespoons of Parmesan evenly over the steak.
  6. Arrange Steak and Asparagus: Once the potatoes are partially cooked, push them to one side of the pan and place the steak next to them. Add the asparagus to the pan, drizzle with 1/2 tablespoon olive oil, sprinkle the remaining Parmesan, one minced garlic clove, and season with sea salt and pepper.
  7. Broil Steak and Vegetables: Return the pan to the broiler. Cook the steak for 4-6 minutes per side, checking for medium doneness. If you prefer steak more done, add about 2 more minutes per side. You may remove the asparagus if it cooks faster to prevent overcooking.
  8. Rest and Serve: Remove the pan from the oven and allow the steak to rest for 5-10 minutes. Sprinkle additional Parmesan over the steak and vegetables before serving. Enjoy your hearty and flavorful sheet pan meal!

Notes

  • If you have larger potatoes, cutting them into eighths ensures they cook evenly and quickly under the broiler.
  • Keep an eye on the asparagus during broiling as it can cook faster than the steak and potatoes; remove it when done to avoid overcooking.
  • Resting the steak after cooking is essential for juicy, tender meat.
  • Feel free to adjust garlic and Parmesan amounts to your taste preference for stronger or milder flavors.
  • Use a meat thermometer to check for your preferred steak doneness: 130°F for medium-rare, 140°F for medium.
