Description

These Pumpkin Chocolate Chip Bars combine the warm spice of cake mix with the moist richness of pumpkin and the sweet decadence of chocolate chips. Perfect for a fall dessert or anytime treat, these bars are easy to make and bake up moist and flavorful with a drizzled chocolate topping for an extra touch of indulgence.

Ingredients

Ingredients

  • 1 package regular size spice cake mix
  • 1 can (15 ounces) solid-pack pumpkin
  • 2 cups semisweet chocolate chips, divided

Instructions

  1. Make the batter: Preheat the oven to 350°F (175°C) and grease a 13x9-inch baking pan or line it with parchment paper, leaving a 2-inch overhang on all sides for easy removal. In a large mixing bowl, combine the spice cake mix and the can of pumpkin. Using a hand mixer or stand mixer, beat on low speed for 30 seconds, then increase to medium speed and continue beating for an additional two minutes until fully combined.
  2. Fold in chocolate chips: Gently fold 1½ cups of semisweet chocolate chips into the batter, ensuring they are evenly distributed throughout.
  3. Bake the bars: Pour the batter into the prepared pan and spread it evenly using an offset spatula or butter knife. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  4. Cool the bars: Remove the pan from the oven and transfer it to a wire rack. Allow the bars to cool completely in the pan to let them set properly.
  5. Melt remaining chocolate chips: While the bars cool, melt the remaining ½ cup of semisweet chocolate chips in the microwave by heating at 15-second intervals. Stir thoroughly between each interval to prevent burning until the chocolate is smooth and fully melted.
  6. Decorate with chocolate drizzle: Drizzle the melted chocolate evenly over the cooled bars. Let the chocolate set completely before lifting the bars out of the pan using the parchment paper overhang and cutting into squares.

Notes

  • For easier removal, line the baking pan with parchment paper instead of just greasing it.
  • Ensure the chocolate is melted gently by microwaving in 15-second bursts and stirring to avoid burning.
  • You can substitute chocolate chips with your favorite variety such as dark chocolate or white chocolate for a different flavor.
  • Bars keep well stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
