Ingredients
Main Ingredients
- 2 cups basmati rice
- 3 cups water
- 1 cup capsicum, chopped
- 1 cup onion, chopped
- 1/4 cup green peas
- 1 teaspoon ginger garlic paste
- 1 tablespoon lemon juice
- Salt, to taste
Whole Spices
- 2 cloves
- 1 green cardamom (elaichi)
- 2 teaspoons cumin seeds (jeera)
Spices & Flavorings
- 2 teaspoons garam masala
- 3 teaspoons red chili powder
- 1 teaspoon turmeric powder (haldi)
- Oil, as needed
- Ghee (clarified butter), as needed
Instructions
- Soak the Rice: Wash the basmati rice thoroughly with water until clear, then soak it in water for about 30 minutes to soften the grains and improve texture.
- Prepare the Spice Base: Heat oil and ghee in a pressure cooker over medium heat. Add cumin seeds to temper, followed by cloves and cardamom. Let them crackle to release their aroma.
- Sauté Vegetables and Spices: Add green peas to the cooker along with ginger garlic paste, and sauté briefly. Follow by adding 1/4 teaspoon each of red chili powder, turmeric powder, and garam masala. Stir to mix the spices.
- Add the Rice: Drain the soaked rice and add it to the cooker. Mix gently with the spices and vegetables so the rice grains are coated well.
- Season and Cook: Add lemon juice, the remaining red chili powder, turmeric, salt to taste, coriander powder (optional, inferred), and garam masala. Mix all ingredients well. Pour in 3 cups of water.
- Pressure Cook the Pulav: Close the pressure cooker with its lid and cook on medium heat until you hear 2 whistles (two full pressure cooks), then turn off the heat and let the pressure release naturally before opening.
- Sauté Onion and Capsicum: Meanwhile, in a separate pan (kadai), heat oil and add chopped onions and capsicum. Add cloves for flavor, then sprinkle red chili powder, turmeric, salt, and garam masala. Cook until the onions are soft and vegetables are slightly tender.
- Combine and Serve: Gently fluff the cooked rice with a fork and fold in the sautéed onion and capsicum mixture. Serve hot as a standalone meal or with raita or salad.
Notes
- Using a pressure cooker significantly reduces cooking time while infusing the rice with the spices' flavors.
- Soaking the rice helps achieve fluffy and separate grains in the final dish.
- You can adjust the spice levels by modifying the amount of red chili powder and garam masala according to your preference.
- Adding lemon juice brightens the flavor and balances the spices.
- Sautéing onions and capsicum separately enhances texture and adds freshness to the pulav.
- The recipe can be easily customized by adding other vegetables like carrots or beans.
