Ingredients
Sausage and Oil
- 12 oz cooked sausage (Cajun, Andouille, or smoked sausage), sliced into coins
- 1 tablespoon olive oil
Vegetables
- 1 large red bell pepper, diced
- 1 large zucchini, sliced
- 2 cups corn kernels (from about 3 ears, completely cooked)
Seasoning and Garnish
- ½ teaspoon chili powder
- Fresh cilantro, chopped, for garnish
Instructions
- Cook sausage: Heat 1 tablespoon olive oil in a cast-iron skillet over medium heat. Add sliced cooked sausage coins and cook for 5 minutes on one side, then flip and cook for another 3 minutes. Remove sausage from skillet to a large plate, leaving some oil in the pan and reserving extra oil in a small heat-proof bowl.
- Cook bell pepper: In the same skillet, add diced red bell pepper and sauté on medium heat for about 4 minutes. Add some reserved sausage oil if needed to prevent sticking. Remove cooked bell pepper to the plate with the sausage.
- Cook zucchini: Using the same skillet, add sliced zucchini and cook on medium heat for approximately 3 minutes, adding reserved oil as needed to avoid sticking.
- Prepare corn kernels: Slice corn kernels off the cooked corn cobs using a knife and add them to the skillet.
- Combine and season: Return the cooked sausage and bell pepper to the skillet with zucchini and corn. Mix thoroughly and add the reserved sausage oil back into the pan. Sprinkle ½ teaspoon chili powder and reheat everything together on low heat while stirring to blend flavors.
- Garnish and serve: Remove skillet from heat and top the dish with freshly chopped cilantro. Taste and adjust salt if necessary, although the sausage typically adds sufficient saltiness.
Notes
- The sausage used is generally salty, so additional salt may not be necessary; season to taste if needed.
- Using a cast-iron skillet helps develop great flavor and even cooking.
- Reserve and reuse the sausage oil to enhance the flavor of the vegetables and the overall dish.
- Serve hot for the best taste and texture.
