Description

These Sausage Breakfast Bowls combine roasted sweet potatoes, savory turkey sausage, colorful bell peppers, and fluffy eggs baked together to create a hearty and nutritious meal perfect for meal prep and quick morning breakfasts.

Ingredients

Sweet Potatoes

  • 2 large sweet potatoes, diced (30 oz.)
  • 1/2 tablespoon avocado oil (7g spray)
  • 1/2 teaspoon salt
  • Pinch of pepper

Sausage and Vegetables

  • 1 pound breakfast turkey sausage
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced

Eggs

  • 5 large eggs
  • 2 1/2 cups egg whites
  • Salt and pepper for seasoning

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit and place 5 oven-safe containers on a baking sheet for even cooking.
  2. Prepare Sweet Potatoes: Distribute the diced sweet potatoes evenly among the 5 bowls (about 6 oz. per bowl). Spray the potatoes with avocado oil and season lightly with salt and pepper, mixing thoroughly to combine.
  3. Roast Sweet Potatoes: Bake the sweet potatoes in the preheated oven for 35-40 minutes, or until they reach your preferred tenderness.
  4. Cook Sausage: While the potatoes roast, brown the breakfast turkey sausage in a pan over medium-high heat until no pink remains. Drain any excess grease, cover, and set aside to keep warm.
  5. Prepare Bell Peppers: Dice the red and green bell peppers and set them aside, ready to be added later.
  6. Assemble Bowls: Once the sweet potatoes are cooked, remove the bowls from the oven and evenly distribute the cooked sausage and diced bell peppers into each bowl.
  7. Add Eggs: To each bowl, add one whole egg and 1/2 cup of liquid egg whites. Season with salt and pepper, then mix well to incorporate all ingredients.
  8. Bake Egg Mixture: Return the bowls to the oven and bake for another 35-40 minutes, or until the egg mixture is fully set and cooked through in the center.
  9. Cool and Store: Allow the bowls to cool before sealing with lids and refrigerating. For serving, reheat each bowl in the microwave for 2-3 minutes.

Notes

  • Use oven-safe containers that are microwave-safe for easy reheating.
  • You can swap turkey sausage for a plant-based sausage to make it vegetarian-friendly.
  • Adjust seasoning according to taste, adding herbs or spices if desired.
  • To reduce sodium, use low-sodium sausage and limit added salt.
  • Ensure eggs are fully cooked for food safety when baking in individual bowls.
