Description

This Sheet Pan Gnocchi and Sausage recipe is a quick and delicious one-pan meal that combines tender baked gnocchi, flavorful turkey kielbasa sausage, burst grape tomatoes, and a zesty fresh herb dressing. Perfect for a weeknight dinner, it requires minimal prep and cleanup while delivering a satisfying blend of textures and savory flavors accented by fresh greens and herbs.

Ingredients

Main Ingredients

  • 12 ounces dry gnocchi
  • 2 turkey kielbasa sausages, cut into 1/4-inch rounds
  • 1 pint grape tomatoes
  • 2 teaspoons minced garlic
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon dried herbs (or 2 teaspoons fresh herbs, see note)
  • 1/4 teaspoon crushed red pepper flakes
  • 1-2 cups fresh greens (such as spinach, arugula, or kale)

Herb Dressing

  • 3/4 cup olive oil
  • 1/4 cup water
  • 2 tablespoons fresh-squeezed lemon juice
  • 1 teaspoon minced garlic (or 1/2 teaspoon garlic powder)
  • 1 tablespoon fresh herbs (such as parsley, cilantro, dill, thyme, basil, or 1 teaspoon dried herb blend)
  • Generous salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it's at the perfect temperature for baking the gnocchi and sausage evenly.
  2. Prepare Sheet Pan Mixture: On a large rimmed sheet pan, combine the dry gnocchi, sliced turkey kielbasa, grape tomatoes, minced garlic, olive oil, salt, black pepper, crushed red pepper flakes, and dried herbs. Toss everything thoroughly so all ingredients are well coated and evenly distributed.
  3. Bake the Ingredients: Spread the mixture out in an even layer on the sheet pan. Bake in the preheated oven for 20 to 25 minutes until the gnocchi is tender and the tomatoes have burst, releasing their juices.
  4. Make the Herb Dressing: While the gnocchi and sausage bake, combine the olive oil, water, fresh lemon juice, minced garlic, fresh herbs, and salt and pepper in a blender or food processor. Pulse for about 30 seconds until the dressing is well emulsified.
  5. Combine and Serve: Remove the baked gnocchi and sausage from the oven. Toss the fresh greens directly onto the hot mixture on the sheet pan, allowing them to wilt slightly. Drizzle the prepared herb dressing over everything. Serve immediately for a fresh and flavorful meal.

Notes

  • You can substitute the turkey kielbasa with any sausage of your choice, including vegetarian options for a different variation.
  • For fresh herbs, parsley, cilantro, dill, thyme, or basil work well; adjust quantities based on your preference.
  • Fresh greens such as spinach, arugula, or kale can be used and will wilt slightly when tossed with the hot gnocchi mixture.
  • If using dried herbs in the dressing, reduce the quantity as dried herbs are more concentrated than fresh.
  • For a spicier dish, increase the crushed red pepper flakes to taste.
