Ingredients
Steak and Marinade
- 1 1/2 pounds flank or skirt steak
- 6 cloves garlic, chopped
- 1 tablespoon chipotle chili powder
- 1 tablespoon onion powder
- 1 tablespoon smoked paprika
- 1/2 cup orange juice
- 1/4 cup tamari or soy sauce
- 1 tablespoon honey
- 2 tablespoons extra virgin olive oil
- 1-2 jalapeños
Additional Ingredients
- Warmed corn or flour tortillas
- Avocado, sliced, for serving
- Feta cheese, crumbled, for serving
- Shredded lettuce, for serving
Mango Lime Salsa
- 1 cup mango chunks
- 2 tablespoons lime juice
- 1/4 cup chopped cilantro
- Sea salt, to taste
Instructions
- Preheat the oven: Preheat your oven to 475°F. Prepare a baking sheet by lining it with parchment paper or lightly rubbing it with oil to prevent sticking.
- Marinate the steak: On the prepared sheet pan, toss the flank or skirt steak with chopped garlic, chipotle chili powder, onion powder, smoked paprika, orange juice, tamari or soy sauce, honey, and olive oil. If you have time, allow the steak to marinate on the pan for 20 to 30 minutes to enhance the flavor.
- Add jalapeños and bake: Arrange 1 to 2 whole jalapeños around the steak on the sheet pan. Place the pan in the oven and bake the steak for 10 minutes at 475°F.
- Broil the steak: After baking, switch your oven setting to broil. Broil the steak for 2 to 5 minutes until the exterior crisps up, watching closely to avoid burning.
- Rest and slice the steak: Remove the sheet pan from the oven and let the meat rest for 10 minutes. Then, thinly slice the steak and toss it with the flavorful sauce collected on the pan.
- Prepare the salsa: While the steak is resting, make the mango lime salsa by combining mango chunks, lime juice, chopped cilantro, and sea salt in a bowl. Remove the jalapeños from the sheet pan, deseed and chop them if you prefer less heat, and add them to the salsa.
- Assemble tacos: Warm your choice of corn or flour tortillas. Fill each tortilla with sliced steak, then top with shredded lettuce, avocado slices, feta cheese, and spoonfuls of the fresh mango lime salsa and extra pan sauce. Serve immediately and enjoy!
Notes
- If using flank steak, slicing against the grain will ensure the meat is tender.
- Marinating the steak on the sheet pan saves cleanup time and allows the meat to absorb more flavor.
- Adjust the number of jalapeños and whether to deseed depending on your preferred spice level.
- For a gluten-free meal, use tamari instead of soy sauce and corn tortillas instead of flour tortillas.
- This recipe can be doubled to feed more guests using a larger sheet pan or two pans.
