Description

Tender and flavorful slow cooker potatoes cooked to perfection with garlic, olive oil, and fresh herbs. This easy recipe ensures a hands-off approach for a comforting side dish that pairs well with any meal.

Ingredients

Potatoes

  • 2 pounds small potatoes (unpeeled, such as small red potatoes, baby yellow potatoes, or fingerling potatoes)

Seasoning

  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves (minced)
  • ½ teaspoon kosher salt
  • Chopped fresh herbs (such as flat leaf parsley, basil, thyme, or rosemary), optional
  • Flaked sea salt, optional

Instructions

  1. Combine ingredients: In a 6-quart slow cooker, add the small potatoes, extra virgin olive oil, minced garlic, and kosher salt. Stir gently to ensure everything is evenly coated.
  2. Slow cook the potatoes: Cover the slow cooker with its lid and cook the potatoes until they are tender. This will take about 3 to 4 hours on high heat, or 5 to 6 hours on low heat. Avoid uncovering the lid during the cooking time to retain moisture and heat.
  3. Finish and serve: Once the potatoes are tender, uncover and stir them. Taste and adjust seasoning by adding extra olive oil or salt if desired. Toss the potatoes with chopped fresh herbs and sprinkle with flaked sea salt if using. Serve immediately as a warm side dish.

Notes

  • Do not peel the potatoes; leaving the skins on adds texture and nutrients.
  • Cooking times may vary depending on potato size and your slow cooker model.
  • Fresh herbs are optional but add a bright flavor complementing the garlic and olive oil.
  • Flaked sea salt adds a nice finishing crunch and seasoning contrast.
  • This dish pairs well with roasted meats, grilled vegetables, or as part of a vegetarian meal.
