Description

This Slow Cooker Marry Me Chicken is a rich, creamy, and flavorful dish featuring tender chicken breasts slow-cooked with sun-dried tomatoes, garlic, and aromatic herbs. Finished with cream cheese, Parmesan, and fresh basil, it promises a comforting meal perfect for busy days.

Ingredients

Chicken and Coating

  • 650 g Skinless, boneless chicken breast (about 4 pieces, cut into bite-sized pieces)
  • 30 g Plain flour
  • Sea salt and freshly ground black pepper, to taste

Cooking Base

  • 3 Garlic cloves (peeled and crushed)
  • 100 g Sun dried tomatoes (drained and very finely chopped)
  • 1 tsp Dried oregano
  • 2 tsp Paprika
  • 300 ml Boiling water
  • 1 Chicken stock cube (undiluted, crumbled)

Finishing

  • 100 g Cream cheese
  • 50 g Parmesan (grated)
  • 15 g Fresh basil leaves

Instructions

  1. Coat the Chicken: Toss the chicken pieces thoroughly in the plain flour, seasoning well with sea salt and freshly ground black pepper to ensure each piece is evenly coated.
  2. Combine in Slow Cooker: Place the floured chicken into the slow cooker. Add the crushed garlic, finely chopped sun dried tomatoes, dried oregano, paprika, crumbled chicken stock cube, and pour in the boiling water over the mixture.
  3. Cook the Chicken: Set the slow cooker to HIGH and cook for 2.5 to 3 hours, or alternatively on LOW for 5 to 6 hours, until the chicken is fully cooked through and tender.
  4. Add Finishing Ingredients: Shortly before serving, stir in the cream cheese, grated Parmesan, and fresh basil leaves to create a rich, creamy sauce coating the chicken.

Notes

  • Ensure the chicken is thoroughly coated in flour and seasoning for better sauce thickening and flavor.
  • You can adjust the cooking time based on your slow cooker’s heat settings and chicken size.
  • Serve the dish with pasta, rice, or crusty bread to make a complete meal.
  • Fresh basil added at the end gives a vibrant aroma and fresh flavor.
  • For a spicier version, consider adding a pinch of chili flakes with the paprika.
