- 1 (13-ounce) can quartered artichoke hearts, chopped and drained
- 1/3 cup finely-chopped white or red onion
- 4 cloves garlic, minced
Dairy
- 1 (8-ounce) brick low-fat cream cheese, cut into 1-inch cubes
- 1 cup light sour cream or plain Greek yogurt
- 1 cup shredded Mozzarella cheese
- 1/2 cup grated Parmesan cheese
Seasonings
- 1/2 teaspoon black pepper
- 1/4 teaspoon fine sea salt
Instructions
- Combine all ingredients: Place the chopped spinach, artichoke hearts, cream cheese cubes, light sour cream or Greek yogurt, shredded mozzarella, grated Parmesan, chopped onion, minced garlic, black pepper, and sea salt into a mixing bowl and toss briefly to combine evenly.
- Add to slow cooker: Transfer the combined ingredients into the bowl of a small slow cooker, spreading them evenly for consistent cooking.
- Slow cook the mixture: Cover the slow cooker and cook on low heat for 2 to 3 hours, or alternatively on high heat for 1 hour, until all the cheese is fully melted and the dip is hot and bubbly.
- Stir the dip: Once cooked, stir the dip thoroughly to combine all ingredients evenly and create a smooth, creamy texture.
- Adjust seasoning: Taste the dip and add extra salt and pepper if needed, according to your preference.
- Serve warm: Serve the spinach artichoke dip warm with your choice of dippers such as tortilla chips, bread slices, crackers, or fresh vegetables.
Notes
- For a thicker dip, cook on low for the full 3 hours.
- Substitute Greek yogurt for sour cream to increase protein and reduce fat.
- You can prepare the ingredients ahead and refrigerate overnight, then cook the next day.
- Adjust garlic according to taste; adding roasted garlic can enhance flavor.
- Keep dip warm in the slow cooker on the 'warm' setting if serving over time.
