Ingredients
Chicken
- 3 pounds chicken breast
Teriyaki Sauce
- ¾ cup soy sauce
- ¾ cup brown sugar
- ¼ cup white sugar
- ⅓ cup mirin
- 4 tablespoons cornstarch
- 2 tablespoons water
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger
Garnish
- Toasted sesame seeds
- Sliced green onion
Instructions
- Prepare the sauce: In a small mixing bowl, whisk together the soy sauce, brown sugar, white sugar, mirin, cornstarch, water, minced garlic, and freshly grated ginger until smooth and well combined. Set this mixture aside.
- Combine chicken and sauce: Place the chicken breasts into a 4 quart or larger slow cooker. Pour the prepared teriyaki sauce mixture evenly over the chicken.
- Cook the chicken: Cover and cook on HIGH for 3 hours or on LOW for 6 hours, until the chicken is tender and easily shreddable with a fork.
- Shred the chicken: Remove the chicken from the slow cooker and shred it into bite-sized pieces using two forks. Return the shredded chicken back to the slow cooker and stir it into the teriyaki sauce to coat evenly.
- Serve: Spoon the teriyaki chicken over cooked rice. Garnish with toasted sesame seeds and sliced green onions for added flavor and presentation. Enjoy your meal!
Notes
- Note 1: Chicken breast is used for lean protein; you may substitute with chicken thighs for juicier meat.
- Note 2: Adjust soy sauce for lower sodium options if preferred.
- Note 3: Mirin is a sweet Japanese rice wine; if unavailable, substitute with a mixture of white wine and sugar or omit if desired.
- Ensure the slow cooker is large enough to allow proper cooking of 3 pounds of chicken.
- Shredding the chicken in the sauce helps the meat absorb more flavor and keeps it moist.
