Description

These Snowball Brownies are a delightful twist on classic brownies, topped with a creamy marshmallow and frosting layer, then coated with colorful shredded coconut for a snowy, festive look. Perfect for parties or a fun dessert treat, this recipe combines the rich chocolatey flavor of brownies with a light, fluffy topping and vibrant coconut decoration.

Ingredients

Brownie Base

  • 18 ounces box of brownie mix
  • 1/3 cup vegetable oil
  • 1/3 cup water

Topping

  • 7 ounces marshmallow fluff
  • 16 ounces canned vanilla frosting
  • 7 ounces shredded coconut
  • Pink food coloring (2-3 drops or as needed)

Instructions

  1. Prepare Baking Dish: Line a 9x13 inch baking dish with parchment paper to prevent the brownies from sticking and to make removal easier.
  2. Make Brownie Batter: Follow the instructions on the back of your brownie mix box, combining the brownie mix with 1/3 cup vegetable oil and 1/3 cup water. Mix until smooth and well combined.
  3. Bake Brownies: Pour the prepared brownie batter into the lined baking dish and bake according to the times and temperature specified on your brownie mix box, usually around 25-30 minutes at 350°F (175°C).
  4. Cool Brownies: Once baked, remove the brownies from the oven and let them cool completely in the pan, about one hour, before adding the topping.
  5. Prepare Topping: In a medium-sized bowl, combine the 7 ounces of marshmallow fluff with the 16 ounces of canned vanilla frosting. Stir thoroughly until the mixture is smooth and uniform.
  6. Spread Topping: Evenly spread the marshmallow and frosting mixture over the completely cooled brownies, creating a thick, creamy layer.
  7. Color the Coconut: In another medium bowl, add the 7 ounces of shredded coconut. Add 2-3 drops of pink food coloring and gently stir with a spoon until all the coconut is evenly coated. Add additional drops if you want a more intense color.
  8. Decorate: Sprinkle the dyed coconut evenly over the frosting layer on the brownies. Lightly press the coconut down so it sticks to the icing. Optionally, sprinkle more coconut on top for extra coverage.
  9. Slice and Serve: Once decorated, slice the brownies into 15 pieces and serve. Enjoy your festive and colorful Snowball Brownies!

Notes

  • Ensure the brownies are completely cooled before spreading the topping to prevent it from melting.
  • The food coloring can be adjusted to any color for different occasions or preferences.
  • For easier slicing, chill the brownies slightly after decorating.
  • Store leftover brownies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
