Description

This Soul Warming French Onion Pot Roast is a comforting and flavorful dish perfect for chilly months. Combining tender chuck roast with caramelized onions, rich beef broth, and savory herbs, this recipe can be made effortlessly using a slow cooker or oven. The roast is seared for extra flavor, slow-cooked or braised to fall-apart tenderness, and finished with a luscious thickened gravy.

Ingredients

Meat

  • 1 (2 pound) chuck roast (see notes for larger)

Cooking fats

  • 2 tablespoons butter
  • a splash of oil (e.g. vegetable or canola oil)

Vegetables and aromatics

  • 3 cloves garlic, minced
  • 2 large onions, thinly sliced

Liquids and sauces

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar

Seasonings and spices

  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • ⅛ teaspoon celery seeds (crushed)
  • 1 tablespoon sugar

Thickening agent

  • 2-3 tablespoons cornstarch
  • ⅓ cup water (used to dissolve cornstarch)

Instructions

  1. Season and sear the roast: Pat the chuck roast dry and generously season all sides with salt and pepper. Heat a large skillet or Dutch oven over medium-high heat. Add butter and a splash of oil. When the butter melts and crackles, add the roast and sear for 2-3 minutes per side until browned to develop flavor and improve tenderness. Remove the roast and set aside.
  2. Sauté the onions (optional): Add a little more oil if needed and sauté half of the sliced onions for 3-4 minutes in the same pan until they begin to soften and sweat. This adds sweetness and depth, though it can be skipped for a raw-onion slow cook.
  3. Assemble in slow cooker (slow cooker method): Place half the onions into the slow cooker, add minced garlic, beef broth, Worcestershire sauce, apple cider vinegar, onion powder, dried thyme, bay leaf, crushed celery seeds, sugar, and the seared roast. Top with the remaining onions. Cover and cook on low for 6-8 hours, ideally 8, until fall-apart tender.
  4. Finish slow cooker gravy: Remove the meat and keep warm. In a small bowl, mix 2 tablespoons cornstarch with water to make a slurry. Stir the slurry into the slow cooker juices and cook an additional 5-7 minutes to thicken. If still thin, add remaining cornstarch dissolved in water and cook another 5 minutes until thickened.
  5. Oven braising alternative: Preheat oven to 275ºF and position rack in center. After sautéing onions, return the roast to the Dutch oven. Add garlic, beef broth, Worcestershire sauce, apple cider vinegar, onion powder, dried thyme, bay leaf, celery seeds, and sugar. Ensure liquid covers half the roast, adding broth if needed. Stir to combine, cover with lid, and braise in oven 1 hour 15 minutes. Check doneness, then continue braising 1 to 1½ hours until roast is fork tender.
  6. Finish gravy on stovetop (oven method): Remove meat and keep warm. Mix cornstarch and water slurry as above. Heat Dutch oven over medium-high until liquid simmers. Stir in slurry, bring to simmer to thicken. If needed, add more cornstarch slurry and simmer 1-2 minutes until gravy thickens.

Notes

  • For larger roasts, increase cooking time accordingly; low slow cooking is best for tenderness.
  • Searing meat before slow cooking or braising develops better flavor and texture.
  • Sautéing onions before cooking adds sweetness but is optional for slow cooker method.
  • Adjust thickness of gravy with additional cornstarch slurry as desired.
  • Serve with mashed potatoes or crusty bread to soak up the rich gravy.
