Ingredients
Steak Bites
- 2 - 14 oz strip steaks, sliced into 3/4" pieces
- 2 tbsp avocado oil, divided
Cajun Seasoning
- 2 tbsp smoked paprika
- 2 tbsp kosher salt
- 2 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp cayenne powder
- 1 tbsp red pepper flakes
- 1 tbsp fine ground black pepper
- 1 tbsp white pepper
- 1 ½ tbsp oregano
- 2 tsp hot paprika
Additional Ingredients
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 medium jalapeño, thinly sliced
Instructions
- Prepare Steak Bites: Slice the strip steaks into approximately 3/4 inch pieces to ensure even cooking.
- Make Cajun Seasoning: In a small bowl, combine smoked paprika, kosher salt, garlic powder, onion powder, cayenne powder, red pepper flakes, black pepper, white pepper, oregano, and hot paprika. Mix thoroughly.
- Season the Steak: Place the steak bites in a mixing bowl. Toss with 1 tablespoon of avocado oil until evenly coated. Sprinkle 2 tablespoons of the prepared Cajun seasoning over the steak and mix until all pieces are uniformly seasoned. Set aside.
- Sear the Steak Bites: Heat 1 tablespoon of avocado oil in a large skillet over high heat until it shimmers and begins to smoke lightly. Add the steak bites to the pan and continuously turn them to sear all sides, cooking for about 2-3 minutes total to achieve a flavorful crust. Remove the steak bites from the pan and place them on a plate.
- Cool the Pan: Reduce the heat to low and allow the pan to cool slightly for approximately 2 minutes.
- Sauté Garlic and Jalapeños: Add the butter to the pan and let it melt. Stir in the minced garlic, using a wooden turner to scrape up the flavorful browned bits on the bottom of the pan. Then add the sliced jalapeños and cook, stirring occasionally, until fragrant, about 2 minutes.
- Combine Steak and Sauce: Return the steak bites to the skillet and toss them in the garlic butter and jalapeño mixture until well coated and heated through.
Notes
- For best results, use a heavy-bottomed skillet such as cast iron to achieve a good sear.
- Adjust cayenne and jalapeño quantity to control heat level according to preference.
- Resting the steak bites slightly before serving allows flavors to meld and juices to redistribute.
- Serve with rice, crusty bread, or a fresh salad to complement the spicy flavors.
- Use fresh garlic and jalapeños for the most vibrant flavor, but dried or pickled jalapeños can be substituted in a pinch.
