Ingredients
Sausages
- 8 sausages (check packaging to ensure gluten free)
Vegetables
- 600 g (1.3 lb) new potatoes, cut into small chunks
- 2 red peppers, diced into squares
- 2 red onions, chopped into wedges
- 3 medium carrots, chopped into thick diagonal slices
Seasonings and Sauce
- 1 tbsp thyme (dried or fresh)
- 3 tbsp runny honey (only suitable for children from 12 months)
- 3 tsp wholegrain mustard
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Preheat the Oven: Set your oven to 180˚C Fan/200˚C/390˚F/Gas mark 6 to ensure it reaches the right temperature for roasting.
- Prepare the Vegetables: Chop the red peppers into squares, cut each onion into eight wedges, slice the carrots into thick diagonals, and halve the miniature new potatoes. For standard-sized potatoes, chop into slightly larger-than-bite-size pieces.
- Roast the Vegetables: Place all the chopped vegetables in a large roasting tray. Drizzle with olive oil and sprinkle the thyme evenly on top. Mix well to coat all pieces. Spread the veggies in a single layer to avoid overcrowding, which helps them crisp up. Roast in the oven for 20 minutes.
- Add the Sausages: Remove the tray from the oven and give the vegetables a quick stir to loosen them. Arrange the sausages on top of the vegetables, then return the tray to the oven for another 20 minutes.
- Make the Honey Mustard Sauce: While the sausages and vegetables are cooking, mix together the runny honey and wholegrain mustard in a small bowl to create the tangy glaze.
- Glaze and Finish Roasting: Take the tray out again and pour the honey and mustard sauce evenly over the sausages. Return the tray to the oven and roast for a final 20 minutes until the sausages are fully cooked and nicely golden brown.
- Serve: Remove from the oven and serve the sticky sausages with the roasted vegetables immediately for a warm and satisfying meal.
Notes
- Ensure the sausages are gluten free if you require a gluten-free meal.
- Use runny honey suitable only for children aged 12 months and older.
- Cutting the vegetables evenly helps them cook uniformly.
- Avoid overcrowding the roasting tray to allow for crisping.
- This dish pairs well with a simple green salad or steamed greens for added freshness.
