Description

This Strawberry Cheesecake Quesadilla is a delightful and quick dessert perfect for satisfying your sweet tooth. Combining creamy, sweetened cream cheese and fresh strawberries sandwiched between crispy, buttery tortillas, this recipe offers a unique twist on classic quesadillas with a rich, fruity cheesecake flavor in every bite.

Ingredients

Filling

  • 1/2 cup Cream Cheese (softened)
  • 2 tbsp Sugar
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Strawberries (diced)

Quesadilla

  • 4 Tortillas (6 inch)
  • 2 tbsp Butter (softened)
  • 1 tsp Sugar
  • 1/2 tsp Cinnamon

Instructions

  1. Prepare the cream cheese mixture: Add the softened cream cheese, 2 tablespoons of sugar, and vanilla extract to a mixing bowl. Beat the ingredients together until smooth and creamy.
  2. Add strawberries: Dice the strawberries and gently fold them into the cream cheese mixture until well combined, being careful not to mash the berries.
  3. Assemble the quesadilla base: Spread half of the strawberry cream cheese mixture evenly over one tortilla.
  4. Heat the pan: Add 1 teaspoon of butter to a pan and heat it over medium-high heat until the butter is melted and foaming.
  5. Cook the first tortilla: Place the tortilla with the cream cheese side up in the pan.
  6. Prepare the second tortilla: Spread 1 teaspoon of butter on one side of a second tortilla, then lay this buttered side up directly on top of the cream cheese-covered tortilla.
  7. Cook both sides: Cook the assembled quesadilla for 2-3 minutes on one side until crispy and golden, then carefully flip and cook the other side for another 2-3 minutes until the tortillas are crispy and the filling is warmed through.
  8. Add cinnamon sugar topping: Mix together the cinnamon and sugar, then sprinkle the mixture over the cooked quesadilla.
  9. Repeat for the second quesadilla: Repeat the process for the remaining ingredients or cook both quesadillas simultaneously on a griddle if available.
  10. Finish and serve: Remove the quesadillas from heat and let them rest for 2 minutes to set. Slice into wedges and serve with your favorite strawberry sauce or fresh strawberries.

Notes

  • For best results, use softened cream cheese for easy mixing and smooth texture.
  • Adjust sugar amount to taste depending on the sweetness of your strawberries.
  • Be careful when flipping to keep the quesadilla layers intact and avoid spilling the filling.
  • Serve immediately while warm and crispy for the best texture and flavor.
  • You can substitute fresh strawberries with frozen ones, but ensure they are thawed and drained to prevent sogginess.
