Description

Strawberry Earthquake Cake is a delightful and easy-to-make summer dessert that combines the sweet flavors of strawberry cake with creamy, luscious cream cheese and fresh strawberries. Swirled with white chocolate chips and baked to perfection, this cake offers a moist, rich texture that’s perfect for serving at gatherings or enjoying as a special treat.

Ingredients

Cake Batter

  • 1 (15 oz) boxed strawberry cake mix
  • 1 cup water
  • ⅓ cup vegetable or canola oil
  • 3 eggs

Cream Cheese Mixture

  • 1 (8 oz) package cream cheese, softened
  • ½ cup butter, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 2 cups powdered sugar
  • 1 ½ cups fresh strawberries, chopped

Additional Ingredients

  • 2/3 cup white chocolate chips

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish to prevent sticking.
  2. Make the Cake Batter: In a large bowl, combine the strawberry cake mix, water, vegetable or canola oil, and eggs. Mix just until combined to ensure the batter remains light and fluffy. Pour the batter evenly into the prepared baking dish.
  3. Prepare the Cream Cheese Mixture: In another large bowl, beat the softened cream cheese with melted butter, vanilla extract, and almond extract until smooth and creamy. Gently fold in the powdered sugar and chopped fresh strawberries, making sure the strawberries are evenly distributed without breaking them up too much.
  4. Assemble the Cake: Using a spoon, scoop the cream cheese mixture over the strawberry cake batter in dollops. Sprinkle the white chocolate chips on top and lightly swirl the cream cheese mixture and chips into the batter with a knife or spatula to create a marbled effect.
  5. Bake: Place the baking dish in the preheated oven and bake for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean. The cake should be set and slightly golden on top.
  6. Cool and Serve: Allow the cake to cool completely in the pan on a wire rack before slicing. This helps the cake set and makes it easier to cut tidy slices. Serve chilled or at room temperature for a refreshing summer dessert.

Notes

  • Use fresh strawberries for the best flavor and texture.
  • Do not overmix the cake batter to keep the cake light and fluffy.
  • You can substitute white chocolate chips with regular chocolate chips if preferred.
  • Allow cake to cool completely to ensure clean slices when serving.
  • Store leftovers covered in the refrigerator for up to 3 days.
