Description

Swedish Pancakes are delicate, thin, and lacy pancakes that cook quickly on the stovetop. They are traditionally served with tangy plain Greek yogurt or sour cream, sweet lingonberry jam, and a dollop of sweetened whipped cream for a perfect balance of flavors. This recipe makes fluffy, buttery pancakes that are simple to prepare and ideal for a cozy breakfast or brunch.

Ingredients

For the Pancakes

  • 3 large eggs
  • 1 ¼ cups milk (at room temperature)
  • ¾ cup all-purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon kosher salt
  • 2 tablespoons unsalted butter (melted and cooled to room temperature, plus additional for cooking)

To Serve

  • Plain Greek yogurt (or sour cream)
  • Lingonberry jam (or blueberry jam)
  • Sweetened whipped cream

Instructions

  1. Whip Eggs: In the bowl of an electric mixer fitted with the whisk attachment, beat the eggs on medium-high speed for 3 minutes until pale yellow and fluffy, incorporating air for lightness.
  2. Combine Batter: Mix in the milk until just combined. Then add the flour, melted butter, sugar, and salt. If the butter begins to solidify, gently rewarm the batter in 10-second bursts in the microwave to keep it smooth.
  3. Heat Skillet: Preheat a large nonstick skillet over medium heat. Add a small amount of butter to coat the pan to prevent sticking.
  4. Cook Pancakes: Pour about ¼ cup of batter into the skillet and immediately tilt and swirl the pan to spread the batter thinly, forming lacy edges. Cook the first side for 1 to 2 minutes until golden and then flip to cook the other side for 1 minute more.
  5. Serve: Repeat with the remaining batter, adding butter as needed. Serve pancakes warm with plain Greek yogurt or sour cream, lingonberry jam, and sweetened whipped cream.

Notes

  • Ensure the milk is at room temperature to help the batter blend smoothly.
  • Use a nonstick skillet and butter to prevent the delicate pancakes from sticking.
  • Swirling the batter immediately after pouring helps create the traditional thin, lacy edges.
  • Lingonberry jam is classic, but blueberry jam works as a delightful alternative.
  • For fluffier texture, do not overmix the batter once flour is added.
