Description

This Sweet Chex Mix Recipe is a delightful and crunchy snack blend featuring a medley of cereals, pretzels, honey graham bears, almonds, and coconut, all coated in a rich, buttery, and sweet syrup. Perfect for parties, movie nights, or anytime you want a satisfying treat, this mix combines crunchy textures with sweet flavors in just 20 minutes.

Ingredients

Dry Ingredients

  • 10 cups Chex cereal (Corn Chex, Rice Chex, Wheat Chex, or a mix)
  • 3 heaping cups mini pretzel twists (or sticks)
  • 2 cups honey graham bears
  • 1 1/2 cups sliced almonds
  • 2 cups shredded sweetened coconut (adjust to taste)

Syrup Ingredients

  • 1/2 cup salted butter (1 stick)
  • 1 1/2 cups light corn syrup
  • 1 1/2 cups granulated sugar
  • 1/8 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Ingredients: Line two sheet pans with parchment paper to prevent sticking and for easy cleanup. In a very large mixing bowl, combine the cereals, pretzels, honey grahams, sliced almonds, and shredded coconut.
  2. Make Syrup: Melt butter in a large saucepan over medium heat. Once fully melted, add the light corn syrup and granulated sugar, stirring well to combine. Bring this mixture to a full rolling boil while stirring continuously to prevent burning.
  3. Cook Syrup: When the syrup reaches a full rolling boil, continue cooking and stirring constantly for 2-3 minutes to thicken the mixture and develop flavor.
  4. Combine and Flavor: Immediately remove the saucepan from heat. Stir in the vanilla extract and baking soda carefully; the baking soda will cause slight bubbling, which helps aerate the syrup.
  5. Coat Mix: Slowly pour the hot syrup over the cereal mixture in the large bowl. Use a wooden spoon to gently stir and evenly coat all the ingredients without breaking them.
  6. Cool and Serve: Transfer the coated mixture onto the prepared parchment-lined sheet pans, spreading it out to an even layer. Allow it to cool completely before breaking into pieces and serving.

Notes

  • Use a large bowl as the volume of cereal mix can be substantial.
  • Ensure the syrup reaches a full rolling boil before timing for 2-3 minutes to get the correct syrup consistency.
  • The baking soda adds a light texture and prevents crystallization in the coating.
  • Store the mix in an airtight container to maintain freshness and crunch.
  • Adjust shredded coconut quantity to personal taste or omit if desired.
