Description
Sweet Potato Toast is a versatile and healthy alternative to bread toast, made by thinly slicing a sweet potato and toasting or baking the slices until tender. This recipe offers various delicious topping options like cream cheese with blueberries, peanut butter with banana, fried egg with herbs, and avocado mash, making it perfect for breakfast, a snack, or a light meal.
Ingredients
Sweet Potato Toast Base
- 1 large wide sweet potato
- Cooking spray
- Salt, to taste
Topping Options
- Cream cheese with blueberries and chia seeds
- Ricotta cheese with raspberries and shredded coconut
- Peanut butter with banana slices and cinnamon
- Cottage cheese with tomatoes and everything seasoning
- Fried egg with fresh chopped parsley, salt, and black pepper
- Avocado mashed with lime juice, salt, and pepper
Instructions
- Prepare Sweet Potato Slices: Using a large sharp knife, cut off the bottom stem of the sweet potato and place it on a cutting board cut side down. Keep the skin on. Carefully slice about 6 thin slices about 1/4" to 1/3" thick lengthwise from one end to the other.
- Season Slices: Lightly spray both sides of the sweet potato slices with cooking spray and season with salt to taste.
- Toaster Method: Insert the sweet potato slices into a toaster like you would bread. Toast on high until the slices pop up. Check with a fork to see if they are tender; if not, toast for additional cycles. You may adjust the toaster setting to medium depending on your toaster. Remove slices and cool on a wire rack before adding toppings.
- Oven Method: Preheat your oven to 350℉ (175℃). Place a wire rack on a rimmed baking sheet and arrange the sweet potato slices on it. Bake for 15-20 minutes until the slices are fork tender but not completely soft. Remove from oven and cool on a wire rack before adding your favorite toppings.
- Add Toppings: Once the sweet potato toasts have cooled slightly, add your choice of toppings like cream cheese with blueberries and chia seeds, ricotta with raspberries and coconut, peanut butter with banana and cinnamon, cottage cheese with tomatoes and seasoning, a fried egg with herbs, or mashed avocado with lime and seasonings.
Notes
- Slice the sweet potato evenly for consistent toasting results.
- Keep the skin on for extra texture and nutrients.
- Adjust toasting times based on your toaster or oven as sweet potato thickness and appliance vary.
- Use a wire rack to cool to prevent sogginess from condensation.
- Experiment with savory and sweet toppings to suit your taste preferences.
- Sweet potato toast works well as a gluten-free alternative to bread.
