Description

This Taco Casserole with Tortillas is a quick and delicious layered dish featuring seasoned ground beef, melted cheese, and soft tortillas baked to perfection. Perfect for a family-friendly dinner, it combines classic taco flavors into a comforting casserole that is easy to assemble and bake in just 30 minutes.

Ingredients

Meat & Seasoning

  • 1 lb. ground beef
  • 1 ½ tbsp taco seasoning mix
  • ½ cup water

Sauces & Fillings

  • ½ cup salsa con queso

Main Components

  • 3 8-inch flour tortillas or corn tortillas
  • 2 cups shredded Mexican cheese blend or cheddar cheese

For Serving

  • Sour cream

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the right temperature for baking the casserole.
  2. Cook Ground Beef: Heat some oil in a large skillet over medium heat. Add the ground beef and cook until it is browned and fully cooked, breaking it apart with a spoon as it cooks.
  3. Add Seasoning and Simmer: Stir in the taco seasoning mix and ½ cup of water. Let the mixture simmer for 2-3 minutes to blend the flavors thoroughly.
  4. Incorporate Salsa Con Queso: Mix in the salsa con queso evenly throughout the beef mixture, then remove the skillet from heat.
  5. Prepare Baking Dish: Spray an 8-inch round baking tin with cooking spray to prevent sticking.
  6. Layer Ingredients: Place one tortilla at the bottom of the baking pan. Spread one-third of the beef mixture over the tortilla, then sprinkle one-third of the shredded cheese on top. Repeat layering tortillas, beef mixture, and cheese two more times, finishing with cheese on top.
  7. Bake: Place the casserole in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly.
  8. Cool and Serve: Allow the casserole to cool for a few minutes after baking. Slice into wedges and serve warm with a dollop of sour cream if desired.

Notes

  • You can substitute flour tortillas with corn tortillas for a gluten-free version.
  • Adding chopped onions or bell peppers to the beef while cooking can enhance flavor and texture.
  • For extra heat, consider adding a dash of hot sauce or jalapeños to the beef mixture.
  • Sour cream is optional but adds a nice creamy contrast to the casserole.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
