Instructions
- Preheat the Oven and Prepare Baking Sheet: Heat your oven to 400°F (200°C) and line a baking sheet with aluminum foil for easy cleanup.
- Prepare and Bake Potatoes: Wash the potatoes thoroughly, poke several holes in each with a fork, then coat them evenly with olive oil, cracked salt, and pepper. Arrange them on the prepared baking sheet and bake for 45 minutes until tender.
- Cook the Taco Meat: While the potatoes bake, brown the ground beef in a skillet over medium heat along with the diced onion. Once cooked through, drain excess grease, then add taco seasoning and water. Reduce heat and let the mixture simmer gently to develop flavor.
- Make the Cheese Sauce: In a medium saucepan over medium-low heat, combine Velveeta, shredded pepper jack cheese, diced chilies, and evaporated milk. Stir continuously until all cheeses melt smoothly into a creamy sauce.
- Broil the Potatoes: After the initial baking, switch your oven to the low broil setting. Place the potatoes back in and broil for an additional 15 minutes to create a slightly crispy skin.
- Assemble the Taco Stuffed Potatoes: Carefully cut open each baked potato and fluff the interior with a fork. Spoon the creamy cheese sauce generously inside, top with the seasoned taco meat, and finish with your preferred toppings such as grated cheese, tomatoes, jalapenos, sour cream, cilantro, and hot sauce.
Notes
- You can substitute russet potatoes if yellow potatoes are not available; they hold up well to baking and topping.
- For a lower-fat version, use lean ground beef or turkey and reduced-fat cheese products.
- Adjust the level of spice in the taco seasoning and toppings according to your heat preference.
- Leftovers can be refrigerated and reheated; add extra cheese sauce when reheating to retain moisture.
