Description

Tender top sirloin steak cubes marinated in a flavorful teriyaki sauce, skewered with pineapple and red onion, then grilled to perfection. These Teriyaki Beef Skewers are glazed with a thickened homemade teriyaki sauce and garnished with sesame seeds, green onions, and cilantro for a deliciously sweet and savory dish perfect for summer cookouts or easy dinners.

Ingredients

Teriyaki Marinade & Sauce

  • ⅓ cup soy sauce
  • ¾ cup water
  • 6 tablespoons honey
  • 1 tablespoon rice vinegar
  • ½ teaspoon sesame oil
  • 1 teaspoon minced ginger
  • 1 ½ teaspoons minced garlic
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for slurry)

Main Ingredients

  • 2 pounds top sirloin steak, cut into 1 ½ inch cubes
  • 2 cups pineapple wedges, cut into 1 ½ inch cubes
  • 1 cup diced red onion, cut into 1 ½ inch cubes
  • ½ teaspoon sesame seeds
  • 1 tablespoon sliced green onion
  • 2 tablespoons cilantro leaves

Additional

  • Wooden skewers (soaked in water for 30 minutes if using)
  • Vegetable oil (for greasing grill)

Instructions

  1. Whisk Teriyaki Sauce: In a medium-sized bowl, whisk together the soy sauce, ¾ cup water, honey, rice vinegar, sesame oil, minced ginger, and minced garlic until fully combined.
  2. Marinate Beef: Place ½ cup of the teriyaki sauce mixture and the cubed top sirloin steak into a resealable plastic bag. Seal and marinate the beef for at least 30 minutes or up to overnight in the refrigerator. Reserve the remaining marinade for later use.
  3. Soak Skewers: If using wooden skewers, soak them in water for 30 minutes prior to threading to prevent burning on the grill.
  4. Boil Sauce: Pour the remaining teriyaki sauce mixture (about 1 cup) into a small saucepan. Bring it to a boil over medium-high heat and let boil for 1 minute.
  5. Thicken Sauce: In a small bowl, mix the cornstarch with 2 tablespoons water to create a slurry. Slowly whisk the slurry into the boiling sauce. Continue stirring for 30 to 60 seconds until the sauce thickens enough to coat the back of a spoon. Remove from heat and set aside.
  6. Thread Skewers: Alternately thread pieces of marinated beef, pineapple wedges, and red onion onto each skewer.
  7. Preheat Grill: Heat your grill to medium-high. Use a folded paper towel dipped in vegetable oil to carefully grease the grill grates to prevent sticking.
  8. Grill Skewers: Place the teriyaki beef skewers on the hot grill. Discard any remaining marinade. Grill uncovered for 3 minutes on one side, then flip and cook another 3 minutes. Continue cooking on the remaining sides for 1 minute each, or until beef reaches an internal temperature of 130°F for medium-rare or 140°F for medium doneness.
  9. Rest Meat: Remove skewers from the grill and allow the beef to rest for 5 minutes to redistribute juices.
  10. Serve: Glaze the grilled skewers with the thickened teriyaki sauce. Garnish with sesame seeds, sliced green onions, and cilantro leaves. Serve extra teriyaki sauce on the side for dipping.

Notes

  • Soaking wooden skewers prevents them from burning on the grill.
  • Marinate beef overnight for enhanced flavor and tenderness.
  • Use a meat thermometer to ensure perfect doneness.
  • Substitute sirloin with flank steak or ribeye if desired.
  • Grill pineapple is optional but adds a nice caramelized sweetness.
