Description

This recipe for The Best Chicken Quesadillas delivers a perfectly crispy tortilla filled with a savory blend of seasoned chicken, sautéed vegetables, and melted cheeses. Ready in just 30 minutes, these quesadillas are an easy and delicious meal ideal for a quick dinner or a satisfying snack. The combination of spices adds depth without overpowering the fresh ingredients, making these quesadillas a crowd-pleaser for any occasion.

Ingredients

Seasoning Mix

  • 1 teaspoon salt (coarse, kosher salt recommended)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked or regular paprika
  • 1/4 teaspoon black pepper (coarsely ground)

Main Ingredients

  • 4 cups cooked, chopped chicken
  • 1 tablespoon oil (such as vegetable or olive oil)
  • 2-3 cups sliced mushrooms (optional)
  • 2 medium bell peppers (any color), cored and thinly sliced
  • 1 large onion, sliced into thin half-moon strips
  • 2-3 tablespoons broth or water
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded medium or sharp cheddar cheese
  • 8 8-inch flour tortillas

Instructions

  1. Mix Seasonings: In a small bowl, combine all the seasoning ingredients—salt, onion powder, garlic powder, oregano, cumin, chili powder, paprika, and black pepper. Stir well to blend the spices thoroughly.
  2. Season Chicken: Toss the cooked, chopped chicken with half of the seasoning mixture until evenly coated. Set the seasoned chicken aside to allow the flavors to meld while preparing the vegetables.
  3. Sauté Vegetables: Heat 1 tablespoon of oil in a 12-inch nonstick skillet over medium heat. Add the sliced mushrooms (if using), onions, and bell peppers. Sprinkle the remaining seasoning mixture on top of the vegetables. Cook, stirring frequently, until the onions become translucent and the vegetables begin to soften.
  4. Moisten and Finish Veggies: Add 2 to 3 tablespoons of broth or water to the skillet if the vegetables don’t release much liquid on their own. Continue cooking the veggies for 2-3 more minutes, allowing the liquid to reduce slightly, resulting in crisp-tender vegetables.
  5. Assemble Quesadillas: Lay out each flour tortilla and spread shredded Monterey Jack cheese over half of it. Top the cheese with a portion of the seasoned chicken, then the sautéed vegetables, and sprinkle additional cheese on top. Fold the tortillas in half, covering the filling completely.
  6. Cook Quesadillas: Heat a clean 12-inch nonstick skillet or griddle over medium to medium-low heat. Optionally, add a little oil to the pan for extra crispness. Place the folded quesadillas in the skillet and cook until the bottom turns golden brown, pressing lightly with a spatula to help the filling melt and the tortilla crisp. Carefully flip and cook the second side until golden and the cheese inside is melted thoroughly.
  7. Serve: Remove the quesadillas from the skillet, cut each into triangles, and serve immediately. To keep them warm if making ahead, place the cooked quesadillas on a baking sheet in a 200°F (93°C) oven until ready to serve.

Notes

  • For a vegetarian version, omit the chicken and add more sautéed vegetables or beans.
  • If preferred, use corn tortillas for a gluten-free alternative but be aware they are more delicate and may require careful handling.
  • Sautéing the vegetables until crisp-tender ensures they retain some bite and flavor without becoming mushy.
  • Adjust the spice level by modifying the amount of chili powder according to your preference.
  • Ensure the skillet is not too hot while cooking quesadillas to avoid burning the tortillas before the cheese melts inside.
