Ingredients
Dry Ingredients
- 1 ⅔ cup all-purpose flour
- 1 cup light brown sugar (firmly packed)
- 1 cup granulated sugar
- ¾ cup natural cocoa powder
- 1 ½ teaspoons baking soda
- ¾ teaspoon salt
Wet Ingredients
- ½ cup unsalted butter (melted)
- ½ cup neutral cooking oil (such as avocado, canola, or vegetable oil)
- 2 large eggs + 1 egg yolk, lightly beaten (room temperature)
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- ½ cup hot coffee or hot water
Additional
- 1 batch chocolate frosting (see note)
Instructions
- Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Prepare two 8-inch round cake pans by lining the bottoms with parchment paper, then lightly grease and flour the sides to prevent sticking. Set the pans aside.
- Mix Dry Ingredients: In a large mixing bowl or the bowl of a stand mixer with a paddle attachment, combine the flour, brown sugar, granulated sugar, cocoa powder, baking soda, and salt. Stir until all ingredients are well integrated.
- Add Fat: Pour in the melted butter and neutral cooking oil. Stir well until the dry ingredients are moistened. The batter might be thick at this stage, which is normal.
- Add Eggs and Vanilla: Incorporate the lightly beaten eggs, egg yolk, and vanilla extract. Stir thoroughly, pausing occasionally to scrape down the sides and bottom of the bowl to ensure an even mix.
- Add Buttermilk: Gradually add the buttermilk while stirring continuously until well combined and the batter is smooth.
- Add Hot Liquid: Carefully pour in the hot coffee or hot water and stir gently to combine. Scrape the sides and bottom once more to ensure a uniform batter.
- Divide and Bake: Evenly pour the batter between the prepared cake pans. Place them on the center rack of the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
- Cool and Frost: Let the cakes cool in the pans for about 15 minutes. Then invert them onto cooling racks and allow to cool completely before applying your favorite chocolate frosting.
Notes
- For the chocolate frosting, you can use any favorite recipe; a classic buttercream chocolate frosting works beautifully.
- Room temperature eggs help the batter come together better and provide a smoother texture.
- Using hot coffee enhances the chocolate flavor without adding a coffee taste.
- If buttermilk is unavailable, you can substitute with milk mixed with a tablespoon of white vinegar or lemon juice allowed to sit for 5 minutes.
- Ensure not to overmix after adding the flour to maintain tenderness in the cake.
