Ingredients
For the Tofu and Rice Filling
- 1 tablespoon olive oil
- One 14-ounce block extra firm tofu, minimally pressed to remove water
- About 2 cups cooked brown rice and/or quinoa or other grains (precooked package about 8.5 ounces)
- Salt, to taste
For the Peanut Teriyaki Sauce
- 1/2 cup teriyaki sauce
- Juice of 1 orange
- 1/4 cup peanut butter
- A squirt of Sriracha or other chile sauce (optional, to taste)
For Assembly and Garnish
- Butter lettuce or leaf lettuce for wrapping
- Chopped peanuts or crispy onions for topping
- Spicy mayo (see notes)
Instructions
- Cook the tofu: Heat a nonstick skillet over medium-high heat and add a tablespoon of olive oil. Crumble the extra firm tofu directly into the pan. Cook the tofu, stirring occasionally, until it becomes slightly browned and starts to develop a bit of crispness.
- Make the sauce: While the tofu is cooking, whisk together the teriyaki sauce, orange juice, peanut butter, and a squirt of Sriracha (if using) in a bowl until smooth and well combined.
- Add rice and sauce: Add the cooked brown rice (and/or quinoa) into the skillet with the tofu. Pour most of the peanut-teriyaki sauce over the mixture. Stir to combine and sauté for about 5 minutes, allowing the rice and tofu to brown lightly and the sauce to caramelize slightly. Season with salt to taste.
- Assemble the wraps: Separate the butter lettuce leaves carefully and spoon the tofu and brown rice mixture into each leaf. Top with chopped peanuts or crispy onions for crunch, and add a dollop of creamy spicy mayo over the filling.
- Serve and enjoy: Drizzle a bit of the leftover peanut-teriyaki sauce over the wraps as a finishing touch. These lettuce wraps are ready to serve immediately and make a perfect flavorful, healthy meal that’s easy to customize and enjoy.
Notes
- Press tofu minimally to retain some moisture and better texture when cooking.
- Use precooked brown rice or quinoa to speed up preparation.
- Spicy mayo can be made by mixing mayonnaise with sriracha or your favorite chili sauce.
- Adjust the amount of Sriracha in the sauce depending on your spice preference.
- Butter lettuce is preferred for its sturdy yet tender leaves that make perfect wraps.
- Store leftover filling separately and assemble wraps fresh to maintain lettuce crispness.
