Description

Traditional Homemade Chicken Pho (Pho Ga) is a fragrant Vietnamese noodle soup featuring a clear, richly flavored chicken broth made with roasted aromatics and spices. This recipe involves roasting, simmering, and slow cooking to create a deep, savory broth served over delicate pho noodles and topped with fresh herbs, fried shallots, and fish sauce. Perfect for a comforting and authentic meal.

Ingredients

Broth Ingredients

  • 1 yellow onion, halved
  • 1 ginger root, halved
  • 2 tsp coriander seeds
  • 2 tsp fennel seeds
  • 1 whole chicken (approximately 3/4 pound)
  • 1 daikon radish
  • 5 dried scallops (optional)
  • 2 tsp salt
  • 1 cup chicken broth

Noodles and Toppings

  • 1 package pho noodles (fresh or dried)
  • 2 stalks green onions, minced
  • 2 tbsp cilantro, minced
  • 1/4 cup fried shallots
  • Fish sauce, to taste

Instructions

  1. Clean the Dried Scallops: Place the dried scallops in a bowl of water and soak for at least 10 minutes. This step cleans the scallops and helps to soften them for flavor extraction during cooking.
  2. Roast the Onion and Ginger: Preheat your oven to broil. Place the halved yellow onion and ginger on a baking sheet and broil for 10-15 minutes until the edges are nicely charred. This roasting step adds a smoky depth to the broth.
  3. Make the Herb Bundle: Toast the coriander and fennel seeds in a small pan over medium heat for 1-3 minutes until fragrant. Transfer the toasted seeds into a cheesecloth and tie tightly with butcher’s twine to create an herb bundle for easy removal after simmering.
  4. Parboil the Chicken: Put the whole chicken in a large soup pot and cover with water just enough to submerge the chicken. Bring the water to a boil. Once boiling, remove chicken and discard the water to eliminate impurities. This process results in a cleaner broth.
  5. Make the Broth: Return the chicken to the cleaned pot. Add fresh water until the chicken is covered. Add the roasted onion, roasted ginger, soaked dried scallops, sliced daikon, and herb bundle. Bring everything to a boil, then reduce heat to a simmer, cooking for 30 minutes.
  6. Shred the Chicken: Remove the chicken after 30 minutes of simmering and let it rest for about 10 minutes until cool enough to handle. While resting, continue simmering the broth. Shred the chicken meat off the bones, then add the bones back into the pot to continue cooking. Add 1 cup of chicken broth to the pot and let the broth simmer uncovered for an additional 2.5 hours for rich flavor development. Season to taste with salt.
  7. Strain the Broth: Once simmering is complete, remove the solids and strain the broth through a fine mesh sieve into another pot to achieve a clear, clean broth free of any small particles.
  8. Prepare the Toppings: While the broth simmers, mince the green onions and cilantro. Keep them chilled until ready to serve.
  9. Cook the Pho Noodles: When about 10 minutes remain on the broth simmer, prepare the noodles. For fresh pho noodles, cook in boiling water for 2-3 minutes; for dried pho noodles, cook for 5-10 minutes or until tender. Drain and set aside.
  10. Assemble and Serve: Place a serving of cooked noodles in each bowl. Top with shredded chicken, minced green onions, minced cilantro, and fried shallots. Add a dash of fish sauce if desired. Ladle the hot broth over the top and serve immediately.

Notes

  • Using dried scallops is optional but adds a unique umami depth to the broth.
  • Roasting the onion and ginger is essential to achieve the traditional smoky flavor in pho broth.
  • Parboiling the chicken helps eliminate impurities to keep the broth clear.
  • Simmer the broth low and slow for best flavor concentration, ideally for 3 hours total.
  • Adjust salt and fish sauce at the end to suit your taste preferences.
  • Use a fine mesh sieve to ensure your broth is perfectly clear and free of solids.
  • Fresh pho noodles offer best texture but dried noodles are a convenient alternative.
