Description

These Turkey Zucchini Boats are a healthy, comforting dish featuring lean ground turkey cooked in a rich marinara sauce, then spooned into tender zucchini halves and baked to perfection. This low-carb, protein-packed meal is easy to prepare and makes for a delicious family-friendly dinner that's both nutritious and full of flavor.

Ingredients

Main Ingredients

  • 4 medium zucchini squash
  • ½ medium onion, chopped
  • 1 lb ground lean turkey
  • 1 ½ cup marinara sauce
  • 2-3 Tablespoons parmesan cheese (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400° F to prepare for baking the zucchini boats later.
  2. Sauté Turkey and Onion: Heat a large nonstick skillet over medium-high heat. Add the chopped onion and ground turkey to the skillet. Season with salt and black pepper. Cook for 8 to 10 minutes, breaking apart the turkey with a wooden spoon or spatula until fully browned and the onions are translucent.
  3. Add Marinara Sauce: Stir in the marinara sauce to coat the turkey mixture evenly. Cook for an additional 2 to 3 minutes allowing the flavors to meld and the sauce to heat through.
  4. Prepare Zucchini Boats: While the turkey cooks, cut each zucchini in half lengthwise. Using a spoon, scoop out the seeds and center flesh, leaving about ¼ inch thick shell to form zucchini boats.
  5. Fill Zucchini Boats: Arrange the zucchini halves cut-side up in a 9x13 inch baking dish. Spoon the cooked turkey mixture evenly into each zucchini boat. Sprinkle with 2 to 3 tablespoons of parmesan cheese if desired.
  6. Bake: Cover the baking dish with foil and bake in the preheated oven for 20 to 30 minutes, or until the zucchini is tender, the filling is heated through, and the cheese is melted and slightly golden.
  7. Serve: Remove from oven and serve immediately while warm for a delicious, healthy meal.

Notes

  • You can substitute ground chicken or beef for turkey if preferred.
  • For a vegetarian version, replace turkey with cooked lentils or a plant-based ground meat alternative.
  • Adding Italian seasoning or fresh herbs like basil or oregano to the turkey mixture enhances flavor.
  • The parmesan cheese is optional but adds a nice salty, nutty flavor and golden topping.
  • If you prefer a softer zucchini, bake uncovered for the last 5-10 minutes to help excess moisture evaporate.
